We made some great biscuit waffles around Father’s Day. They were so good and super easy to make. Since the biscuit waffles were so successful, I started thinking about what else we could make in the waffle maker. I immediately thought of cinnamon rolls. I didn’t want to do another breakfast recipe, so I decided to make a dessert. I thought Mexican fried ice cream would be excellent since it had the same cinnamon flavors. I wasn’t too sure about frying ice cream at home, so I went with a faux fried ice cream. It turned out fantastic!

This is really easy to make. The faux fried ice cream can be made the day before you want to serve it and stored in the freezer, but I suggest making the cinnamon roll waffles right before serving the sundae. We used crushed corn flakes for the coating but I think Golden Grahams or Cinnamon Toast Crunch would be good too.

Faux Fried Ice Cream and Cinnamon Waffle Sundaes Recipe – ice cream coated in cinnamon, sugar and cornflakes placed on top of a cinnamon roll waffle! Sweet ending to your Mexican fiesta!

ingredients:

  • 1 quart of vanilla ice cream
  • 3 cups crushed corn flakes cereal (I crushed them in the food processor)
  • 1 tsp of ground cinnamon
  • 2 tsp of sugar
  • 1 (12.4-oz) can refrigerated original cinnamon rolls (not Grands)
  • chocolate sauce

instructions:

  1. Scoop ice cream into 8 – ½ cup size rounded balls. Place on baking sheet and freeze until firm, about 1 hour.
  2. In a shallow dish combine crushed corn flakes, cinnamon and sugar. Roll the ice cream balls in the corn flake mixture, covering completely. Repeat as needed.  Freeze ice cream again, until firm (about 3 hours).
  3. When ready to serve make cinnamon roll waffles.
  4. Spray waffle maker with cooking spray. Heat waffle maker.
  5. Separate dough into individual cinnamon rolls. Place up to 4 cinnamon rolls at a time on waffle maker. Close lid of waffle maker; cook 1 to 2 minutes or until light golden brown.
  6. Place cinnamon roll waffle on plate, top with ice cream and drizzle with chocolate sauce.
