Soft Sugar Cookies


If you still need some cookies for Santa this weekend, these soft sugar cookies would be perfect!  They are soft and chewy, and, best of all, they don't require chilling or rolling out!  That is my kind of sugar cookie!

I gave these cookies away as gifts, but we were able to sample a few.  They tasted fantastic!   They stay soft and chewy,  even the day after baking.  These cookies are easy to make, and the kids can help out and roll the dough in the sprinkles.  I promise Santa will love these!




Soft Sugar Cookies

1/3 cup sprinkles
1 cup unsalted butter, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla extract
1 tsp almond extract
2 1/2 tsp baking powder
1/4 tsp salt
2 1/2 cups all-purpose flour

Preheat oven to 400. Set the sprinkles into a small bowl. Set aside.

In a large mixing bowl, beat the butter and sugar with an electric mixer on high speed until fluffy. Add the eggs, vanilla and almond extract. Beat until mixed. Add the baking powder and salt and beat until mixed. Add the flour and beat on medium speed until mixed well.

Roll the dough into 1 1/2 inch balls, then roll each ball in the sprinkles to cover top of cookie. Place two inches apart on ungreased cookie sheets.

Bake 10 minutes or until edges are golden brown. Allow to cool 2 minutes before removing from cookie sheets and setting onto wire racks to cool completely.

Thanks for sharing this great recipe! I haven't been baking Christmas cookies for several years but decided today to make these for my daughter. She loves a soft cookie. These were simple to make and tasty, too. Thanks again!

I made these cookies last night and dough was to soft to roll into balls. It was almost like a thick cake batter. I ended up adding a touch bit more flour and that didn't help very much so I stuck the batter in the fridge for several hours. That seemed to help but when rolling into balls the dough was very sticky. Is this how the dough is supposed to be? Any suggestions to correct?


PS: The cookies just came out of the oven and were delicious!! It was just a messy process prepping everything else

This recipe is a keeper! At 8pm tonight (Christmas) the mood struck me to make sugar cookies. Rarely do cookies come out wonderful from a new (untweaked) recipe. This recipe needs no tweaking! I made my own red sprinkles & 20 minutes later I was munching on cookies faster than you can say "Ho Ho Ho".
