I am not a big bread maker.  It takes too long to make homemade bread, and I just don’t have hours to wait during the week. I stumbled across this recipe on Pinterest for quick yeast rolls and decided to give it a shot.

Wow!  These were a huge hit.  Chicken Legs was amazed at how quick and easy these rolls were.   He tells everyone about them – seriously!  Not only are they super quick and easy, they taste great!  They are especially tasty slathered with honey butter. Give them a try tonight; I promise you won’t be disappointed.

Weeknight Dinner Rolls

  • 1 cup plus 2 Tbsp warm water
  • ⅓ cup oil
  • 2 Tbsp yeast
  • ¼ cup sugar
  • ½ tsp salt
  • 1 egg
  • 3 ½ cups bread flour (can use all-purpose)

Preheat oven to 400 degrees.

In the bowl of a stand mixer fitted with a dough hook, combine water, oil, yeast and sugar. Stir to combine and let rest for 15 minutes. At medium speed, add salt, egg and flour. Knead with dough hook until flour is thoroughly mixed in and the dough is soft and smooth (approximately 2-3 minutes). Divide dough into 12 balls and place in a lightly greased 9×13 pan.  Let rest for 10 minutes.

Bake 10-15 minutes until golden brown.

  2. Made these tonight. They had sort of a funny taste like maybe I used too much yeast? I used the super quick kind…2 tbsp. Seems like maybe it was too much. On the back of the packet for bread it said to use a packet. I almost used all three :\

  9. Made these tonight! Less than 1 hour and I had real bread! My hubby was happy as were my friends that I shared them with! I may need to cut the recipe in half for my family, or stash half in the freezer for another night! YUM!

  10. Steph, These look great and not too scary to make for the novice bread makers like me. I love yeast rolls but have never had the time for all that rising, punching down, rising stuff so I will try these. Thanks!

  11. Angee – you should be able to sub at least half of the flour for whole wheat. You could do all of it, in fact, but you'll need to start with about 1/2 to 1 cup less flour and add as you knead. Whole wheat flour is much denser. King Arthur Flour's website has a lot of great tips on subbing whole grains for processed if you need more info.

  12. Just found you and I mut say I am enjoying it ! Please be sure to provide little details like 'instant' yeast or just 'dry active yeast' so some of us that are more avid bakers (or not) will use the right product. 2 T is alot for the wrong yeast ! looks very good, and I might try this–but first answer my question-please !     1. Denise – I used instant yeast. I think you could use regular yeast and be ok as well.

      These are easy peasy. Hope you like them!

  13. I have a honey butter recipe that's pretty easy, Susan.

    Ingredients:

    1 cup sugar
    1 cup honey
    1 cup cream
    4 sticks unsalted butter

    Place first three ingredients in a sauce pan over medium heat, stirring as necessary. Bring to full boil and boil for 30 seconds. Remove from heat and pour over butter sticks (I put mine in my stand mixer) and beat until thoroughly mixed. Makes 4 half pint jars or two pint jars.

    I always let mine sit out on the counter until they've cooled and then put them in the fridge. Not sure how long it lasts as we always eat it before it goes bad. There is some slight separation so stir before using. It's creamy and amazing. I have to resist the urge to eat it by the spoonful!

  14. These look so good. I'm not sure why, but I'm kind of scared of yeast. I've never really made homemade bread where yeast is involved…I think I need to get over that fear and give these a try!

  15. Any thoughts on how these would do if you used whole wheat flour? I'm not a big bread maker or eater either (so I'm never sure if you can just sub whole wheat for white), but my family would love these and the only way I will is if they are wheat.
