I am not a big bread maker. It takes too long to make homemade bread, and I just don’t have hours to wait during the week. I stumbled across this recipe on Pinterest for quick yeast rolls and decided to give it a shot.
Wow! These were a huge hit. Chicken Legs was amazed at how quick and easy these rolls were. He tells everyone about them – seriously! Not only are they super quick and easy, they taste great! They are especially tasty slathered with honey butter. Give them a try tonight; I promise you won’t be disappointed.
Weeknight Dinner Rolls

- 1 cup plus 2 Tbsp warm water
- ⅓ cup oil
- 2 Tbsp yeast
- ¼ cup sugar
- ½ tsp salt
- 1 egg
- 3 ½ cups bread flour (can use all-purpose)
Preheat oven to 400 degrees.
In the bowl of a stand mixer fitted with a dough hook, combine water, oil, yeast and sugar. Stir to combine and let rest for 15 minutes. At medium speed, add salt, egg and flour. Knead with dough hook until flour is thoroughly mixed in and the dough is soft and smooth (approximately 2-3 minutes). Divide dough into 12 balls and place in a lightly greased 9×13 pan. Let rest for 10 minutes.
Bake 10-15 minutes until golden brown.
Trying to make these tonight… can you use fast rise yeast?
Just made these. The only change was butter instead of oil. Super easy and yummy. I'm telling my friends.

Just realized I used cold water instead of warm. :\ would that have given it a funny taste?
3 packets would still be less than 2 T. instant yeast (super fast) is what you used.
Oops I meant 2 packets and it makes 2 loaves of bread. So I think I did somethin wrong 🙁
Made these tonight. They had sort of a funny taste like maybe I used too much yeast? I used the super quick kind…2 tbsp. Seems like maybe it was too much. On the back of the packet for bread it said to use a packet. I almost used all three :\
Made these last night. Awesome. Yeast breads scare me too.. But they turned out perfect….served with honey butter.
Made them! And they are actually pretty good. Would be awesome with honey butter brushed over the top. And they would be great as a garlic cheese roll… cinnamon roll….oh the possibilities… and they are very quick and easy
Made these tonight—yum is just not enough to describe how good these were!!! And so easy!! I'm always afraid of yeast bread too, and really only know how to use my bread machine for anything yeast-related. These, though… Even I could make them!
