I am not a big fan of sweets, but I could not stop eating this Shortcut New York Crumb Cake. OMG! It was SO good. I couldn’t walk past it without stopping to sneak a bite. This cake is great for breakfast or dessert. Really any time of the day is just fine to have a piece of this cake!
How to Make Crumb Cake with Cake Mix
This recipe is called Shortcut New York Crumb Cake because I used a boxed cake mix for the cake. Make the cake as directed on the box. Pour the batter into a 9×13-inch cake pan and top it with a quick cinnamon crumb topping made with sugar, brown sugar, cinnamon, butter, and flour. Pop the cake in the oven and that is it.
- You can use any flavor of cake mix you prefer.
- I use King Arthur All-Purpose Flour.
- One cup of flour weighs 4.25-ounces. To properly measure flour, give the flour a stir to loosen it up in the container. Use a spoon and lightly spoon the flour into your measuring cup. Use a flat straight edge (like the straight back of a knife) to level off the top of the flour in the measuring cup. Do NOT compact the flour in the measuring cup.
- Can I make a crumb cake in advance? Yes! You can make this and store it in an air-tight container. It will keep 3 to 4 days.
Crumb Cake for Breakfast or Dessert
This cake is SO easy to make and SOOOO delicious! We love this for breakfast with a cup of coffee or slightly warmed with some ice cream for dessert. This is great for an easy weekday breakfast or a holiday morning!

Shortcut New York Crumb Cake
Equipment:
Ingredients:
- 1 box yellow cake mix, plus ingredients to make cake
- 1 tsp vanilla
- ⅔ cup granulated sugar
- ⅔ cup packed brown sugar
- ½ tsp salt
- 1½ tsp cinnamon
- 1½ cups butter, melted and cooled slightly (three sticks)
- 3½ cups all-purpose flour
Instructions:
- Preheat oven to 350ºF.
- Prepare cake mix according to package directions and add vanilla. Pour into lightly greased and floured 9×13-inch pan.
- In the bowl of an electric mixer, combine granulated sugar, brown sugar, salt, cinnamon, melted butter, and all-purpose flour. Mix until combined and crumbly.
- Sprinkle crumb mixture over cake, covering completely. Start at the edges and work your way towards the center for best results.
- Bake for 30 to 35 minutes.

Can you make muffins with this recipe?
I haven’t tried that, so I can not say how they turn out. My guess is that it would be fine, but I haven’t tested it.
I love the versatility of this recipe….my favorites are to make it with a red velvet cake mix, chocolate and even spice cake mix. I will continue to make this recipe to rave reviews and will keep trying it with different flavors. <3
When I made this my cake batter came up on top of the crumb mixture, please tell me what to do next time I make it so this will not happen. The cake was very good,

start at the edges of the pan with the crumb topping and work your way in – crumble the topping into very small pieces and make sure you cover the entire cake – you don’t want to see any batter.

It has been a many years since I first printed it, baked to many yums and lost in my shuffling of clutter. I sifted thru my boxes, searched different sites and hesitated that this was really the original one-thankyou for not changing it and keeping it on as a keeper.

No secret. It doesn't sink. Just place it on top of the cake and bake it. Turns out just like the picture. Enjoy!

I try to make something every Sunday evening for my hubby to take to work to have with a cup of tea in the morning. I usually make a pound cake of some kind or shortbreads, but this looks like a perfect thing to put in the rotation! He's a huge pecan fan. Do you think maybe 3/4 cup or so, chopped small and thrown into the crumble would work ok?
