Chicken, Bacon & Rice Soup recipe – chicken broth, water, rice, cream of celery soup, carrots, bacon and chicken – use a rotisserie chicken and this soup is ready in 20 minutes! Just dump everything in the pot, bring to a boil and simmer. So easy and super delicious! Can also use uncooked chicken breast and make in the slow cooker.
I made this soup for lunch a couple of weeks ago and it was a huge hit. Chicken Legs took one bite and said “This tastes great.”. He took another bite and said “This is restaurant quality!” He loved it! So did I. It was super delicious! It was also great reheated the next day for lunch.
This soup was ready in about 30 minutes. It only takes a few minutes of prep time and it just simmers away on the stove. It made the house smell amazing! I took a couple of shortcuts with this soup. I used rotisserie chicken and precooked bacon. Both are great time savers! I can’t believe something so delicious is so quick and easy to make!
Chicken Bacon & Rice Soup
ingredients:

4 cups chicken broth

2-½ to 3 cups water
-
½ cup long grain rice, uncooked (not instant)

1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp garlic salt
-
¼ tsp pepper
-
1 can cream of celery soup
-
3 carrots, sliced
-
6 slices bacon, cooked and chopped
-
12 oz cooked, chopped chicken (approximately 2 to 2-½ cups)
instructions:
- In a large saucepan or Dutch oven, combine chicken broth and water. Bring to a boil.
- Add rice. Reduce heat to medium-high and continue to boil for 10 minutes.
- Stir in remaining ingredients, reduce heat and simmer for 20 minutes.
