We’ve done wraps, panini and flatbreads for sandwich night. It was time to change it up a bit and break out the quesadillas. Naturally, I started with a Pizzadilla. It combined two of my favorite foods – Pizza and Mexican.
I made these Pizzadillas with our favorite pizza toppings – sausage, turkey pepperoni and mushrooms (in Chicken Legs). Feel free to substitute your favorite toppings. I used La Tortilla Factory tortillas. They are “healthy” tortillas – high in fiber, low in carbs and great tasting! Can’t beat that! The Pizzadillas were wonderful! We both gobbled them up. These are so quick and easy to make. They will be in our regular rotation for lunch and dinner!
Pizzadilla

- 1 large tortilla
- 5 slices turkey pepperoni
- 2 Tbsp cooked and crumbled sausage
- 1 Tbsp chopped mushrooms
- ¼ tsp garlic powder
- ⅓ cup shredded mozzarella
- cooking spray
- pizza sauce, warmed
Heat a medium skillet over medium heat. Spray pan with cooking spray.
Lay tortilla on a flat surface. Cover the torilla with an even layer of cheese. Top one half of tortilla with pizza toppings and sprinkle with garlic powder. Place tortilla in skillet. Cook for 1 minute, until cheese starts to melt. Fold in half – cheese side of tortilla over on pizza toppings. Cook for 2 minutes more, flipping until each side is golden and crisp. Remove, cut into 3 pieces, and serve with warm pizza sauce.
