Biscuit Beignets

No trip to New Orleans is complete without a visit to Cafe du Monde for beignets and coffee.  Beignets might be my favorite “Cajun” food.  I’ve made beignets from the Cafe du Monde mix, but they are a little time consuming.  I decided to take a short cut and make beignets from refrigerated biscuits.  The bagger at Publix actually gave us this idea.  He told us that he had some New Orleans natives come through the line with tons of refrigerated biscuits and said they were using them to make beignets.  They told him that was how they do in in NOLA.  Well, if it is good enough for them, it was good enough for us.  These beignets only took minutes to prepare and tasted just like the beignets in New Orleans!  We loved these so much that we are making them again this weekend!

Biscuit Beignets
(Printable Recipe)

1 (12-oz.) can refrigerated buttermilk biscuits (regular size)
Vegetable oil
powdered sugar

Separate biscuits into individual rounds, and cut into thirds. Pour oil to a depth of 2 inches into a Dutch oven, heat over medium heat to 350°. Fry biscuit pieces, in batches, about 1 minute on each side or until golden. Drain on paper towels, and dust generously with powdered sugar. Serve immediately.

  1. My grandma just took her bread dough when she would make it home made and make a ball flatten it to about half inch thick and fry it in oil put it on paper towels then lightly butter it and dust with either powdered sugar or regular sugar oh sooo yummy.

  3. I was looking forward to trying this recipe since I had seen beignets featured on a travel show. But … we do not getrefrigerated dough of any sort here in Australia, so could not make them according to your recipe. If you have a recipe for refrigeraed buttermilk dough, I would love to try and make it.

    1. don't worry, the dough can come straight from tne fridge, its how my mom did it and we've never had problems

  4. So that's what their called? Wow, next time I make them I'll use their fancy name and try to impress everyone, ha! We cut a hole in the middle and make them look like donuts. I grew up on them! We also dust them in cinnamon sugar instead of powdered sometimes.

  5. Funny, this is how my mother used to make donuts. She would use a thimble and cut a hole in the biscuit and then fry them and sprinkle with powdered sugar. Brings back good memories. Thanks.

  6. Hey Steph,,I'm in Cajun Country about 60 miles Southwest of New Orleans and yes this is how we do it. In the past, I've used the mix, but this is so easy and very good, esp. with a cup of coffee.

  7. I use the mix most of the time but have fried the canned biscuits for years and dusted them with powdered sugar…just didn't know the name of them back then.:)
