I love homemade lasagna. It might be my all-time favorite food. I could give Garfield a run for his money on a pan of homemade lasagna! Seriously! My usual lasagna takes hours to make. I make the sauce from scratch and it simmers for a few hours. I only make it on special occasions because it takes so much work. I can’t go too long without having lasagna, so I have to make some quick versions every now and then. This dish had all the flavors of lasagna, but with a fraction of the effort.
I browned the sausage ahead of time and this took minutes to assemble. I literally had this ready to go in the oven before it had finished preheating. We loved, loved, loved this dish! I wanted to eat the whole thing! It was full of cheesy goodness. I really loved all the meat sauce that the biscuits cooked in. Make sure you scoop up the sauce that is left in the pan and pour it over the biscuits when serving.

Bubble Up Lasagna
serves 8
(Printable Recipe)
- 1 lb Italian sausage
- 1 jar (24 oz) spaghetti sauce
- 2 cups mozzarella cheese, divided
- 1 cup cottage cheese
- ¼ cup parmesan cheese
- 1 can (12 oz) refrigerated Pillsbury Grands Jr flaky biscuits
Preheat oven to 375. Lightly grease a 9×13-inch pan with cooking spray. Set aside.
In a skillet, brown Italian sausage. Drain fat. Stir in spaghetti sauce. Set aside to cool.
Cut biscuits into quarters. Place in medium bowl. Toss biscuits with meat sauce, cottage cheese and 1 cup of mozzarella cheese.
Pour mixture into prepared 9×13-inch pan. Top with remaining cheese.
Bake for 25-30 minutes, or until biscuits are done.
What about seasoned hamburger meat instead of sausage and ricotta cheese instead of cottage cheese. That's what we use when making traditional lasagna

Actually it was specifically this recipe. I think maybe my biscuit pieces were too big like Kristine said above.
Normally I love anything covered in spaghetti sauce and melted cheese, so the flavors were great!

We used to make bubble up pizzas years ago but never tried this, what a great idea.
Great meal! I think the problem above might have been the larger size biscuits. I had the regular ones too, but cut them into eighths. Tossed really well and baked a bit extra to make sure there was no doughiness. And ground beef seasoned really well instead of sausage. Big hit with my family!! Thanks!
