Easy Christmas Cookie Recipe

Christmas and cookies go together like peanut butter and jelly, tacos and Tuesday, or bacon and eggs. It just isn’t Christmas without cookies in our house. Listening to Christmas music and baking is my favorite part of the holiday season! These Molasses Sugar Cookies are a family favorite. They taste like Christmas: molasses, cinnamon, ginger, and cloves – yum! The cookies were crispy on the outside and soft, moist, and tender on the inside. AKA – the perfect cookie!!

How to Make Molasses Sugar Cookies

These ginger molasses cookies are super easy to make. Melt some shortening in a medium saucepan and cool. Combine the melted shortening, granulated sugar, molasses, and egg in a large bowl and mix well. Add dry ingredients – flour, baking soda, spices, and salt to the wet ingredients. Mix thoroughly. Scoop the dough with a small cookie scoop. Place sugar into a small bowl and roll cookie dough balls into the sugar. Place dough balls on a baking sheet and bake. Cook cookies on a wire rack

In a microwave-safe bowl, combine white chocolate chips and 1½ Tbsp shortening. Microwave on HIGH for 30 seconds. Stir and microwave in 15-second intervals until melted. Dip half of each cookie into melted white chocolate. Place on wire rack and top with sprinkles, if desired.

  • The secret ingredient in these soft molasses cookies is Crisco Shortening! One of the benefits of using Crisco® is that it has a high melting point than butter, so the cookies don’t spread much while baking. They also have an interior texture that is softer or lighter.
    • Can I use butter? Yes, but it will change the texture of the cookies.
  • You can mix the cookie dough by hand or with an electric mixer.
  • I actually like to use Pumpkin Spice in these cookies. I always have some in the spice pantry and these cookies are a great way to use it up! Pumpkin Spice is just a mixture of cinnamon, ginger, nutmeg, and allspice. It is cheaper than buying all the spices individually.
    • You can make your own pumpkin spice with ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon allspice.
  • Can cookie dough be made in advance? Yes! You can scoop the dough into balls and refrigerate a few hours to overnight before baking.
  • Can Molasses Sugar Cookies be frozen? Yes! Scoop the dough into balls and place on a parchment paper lined baking sheet. Place the cookie sheet into the freezer. Transfer the frozen cookie dough balls to a freezer bag and store in the freezer for up to 3 months.
    • There is no need to thaw the cookie dough before baking. Simply add a few minutes to the baking time.
  • Store leftover cookies in an airtight container at room temperature.

  • Preheat oven to 350ºF. Line two baking pans with parchment paper. Set aside.
  • Melt ¾ cup shortening in a medium saucepan. Cool. Add sugar, molasses, and egg, mix well. Add flour, baking soda, pumpkin spice, and salt. Mix thoroughly.
  • Using a medium cookie scoop (1½Tbsp), scoop cookie dough and roll in ¼ cup sugar. Place on prepared cookie pan about 2-inches apart.
  • Bake for 10 to 12 minutes. Cool on wire rack.

  2. Great idea to dip them and add festive sprinkles 🙂 Almond Bark works well too (which is just vanilla bark, no almonds in it). I have found it melts really smooth and stays fluid a bit longer than white chocolate, but I think you sacrifice a little flavor. Either way cookies are super good when dipped 🙂
