I follow Rotel on twitter, and they recently posted a link to their website with lots of great recipes. This one really caught my eye – cheese straws with Rotel. What a great idea! I made a half batch and they were really good. They were soft and delicious. They weren’t as spicy as I thought they would be with the Rotel. We really enjoyed these Queso Cookies and would definately make them again!

- 2 sticks of butter, softened
- 2 cups of grated white cheddar cheese
- 2 cups of flour
- ½ teaspoon of salt
- ½ teaspoon of cayenne pepper
- 1 can of Ro-Tel, drained
Preheat oven to 350. Mix the cheese and butter together. Add the flour, salt, cayenne and tomatoes and stir until it becomes a ball.
For straws, roll out the dough into a rectangle that is ¼ inch thick, and using a pizza cutter, cut the dough into rectangles 2″x1″ rectangles. Poke four holes in the top of each cheese straw with a fork.
Bake on a parchment-lined cookie sheet for 20 minutes. Cool and then serve. Makes three dozen.
