This Cashew Crunch should come with a warning label! It is HIGHLY addictive!! Cashews, Crispix cereal, and coconut baked in a sweet brown sugar syrup. OMG! SO good! We could not stop eating this. I had to give most of this away to keep us from devouring it all ourselves.
How to Make Cashew Crunch
This snack mix is super easy to make. Place cashews, coconut, and Crispix cereal in a giant bowl. In a saucepan, combine brown sugar, corn syrup, and butter. Bring to a boil. Remove from heat and stir in vanilla and baking soda. Pour over cereal mixture, tossing to coat evenly. Spread the cereal mixture on a large baking sheet and bake. Let the mixture cool and break up in pieces.
- Can substitute any variety of Chex cereal for Crispix. This would be some cinnamon Chex cereal!
- Feel free to leave out the coconut if you aren’t a fan.
- This snack mix can be made ahead of time and stored in an air-tight container. I would say it should last at least a week in an air-tight container. I’m totally guessing on this because I’ve never had any in the house for more than a couple of days. We go through this snack mix like crazy!
Snack Mix is Great for Parties
I am making a batch of this snack mix to take home for Thanksgiving. It is perfect for pre-meal snacking and watching football games! This recipe makes a ton, so there is plenty for sharing. It would make a great homemade holiday gift! Just divide it up in some cute holiday bags and tie with a ribbon. Perfect!

This is absolutely delicious and “habit forming”. Try it as is in the recipe then decide any tweaking for yourself. Thanks for sharing this yummy nibbler!
This is fantastic. I’ve taken it to work several times and everyone always loves it and asks for the recipe. All the people asking questions to make potential changes should just try it as is and then comment.
could you sub honey for the corn syrup?
I'm not sure. I've only made this as written above.
can I replace the coconut with something else compatible? No on here likes coconut
I guess you can leave it out.
I had to cut brown sugar down to a 1/4 cup for us. I also added some small cheese crackers. It is sweet, but so yummy.
Salted cashews or raw, please?
I used salted
I used unsalted from Aldi. They tasted good with the salt from the cereal and my cheese crackers.
Ok, thank you so much! It looks delicious!!
Also, maybe coconut oil would work too
Could you sub anything to make this dairy-free and still taste good??
The only thing I can think of is butter flavored crisco
Thanks
Light or dark karo in this recipe ?
I used light corn syrup
