Pin This RecipeA few months ago we had dinner at a friends house. She was dabbling in the Keto diet and served these Cheesy Keto Biscuits. I wasn’t sure what to expect, but they were DELICIOUS! Chicken Legs went crazy over them! He couldn’t stop eating them. I snagged the recipe from her so I could make them at home.
Now, these are not low-fat or low-calorie biscuits. They are LOADED with TONS of cheese. Cream cheese and mozzarella cheese. The only special ingredient in these Cheesy Keto Biscuits is Almond Flour. Almond flour is pretty common these days. I’ve found it at Walmart, Target, and Publix.
I used a 12-inch skillet and a large cookie scoop and got 16 biscuits. If you don’t want individual biscuits, I think you could just put the dough in the skillet or baking pan and make a loaf of bread. I like to brush the cooked biscuits with some melted butter and garlic powder.
Even if you aren’t doing the Keto diet, these biscuits are sure to please! We’ve made them several times and enjoyed them every single time!! They are great if you are doing a low-carb diet and missing bread!
Cheesy Keto Biscuits
Equipment:
Ingredients:
- 1 (8-oz) block cream cheese
- 3 cups shredded mozzarella cheese
- 4 eggs
- 4 Tbsp baking powder
- 1⅓ cups almond flour
- 2 Tbsp melted butter
Instructions:
- Preheat oven to 400ºF. Spray a 12-inch cast iron skillet with cooking spray. Set aside.
- In a saucepan over low heat, melt the cream cheese and mozzarella cheese together. Stir until smooth. Remove from heat.
- In a large bowl, combine the melted cheese, eggs, 4 Tbsp baking powder, and almond flour. Mix until smooth. Let stand for 10 to 20 minutes.
- Using a large cookie scoop, scoop dough and place in 12-inch cast iron skillet. Place skillet in refrigerator for 10 minutes.
- Remove skillet from refrigerator. Bake for 20 to 25 minutes, until golden brown.
- Brush cooked biscuits with melted butter.

Is it possible to use less than 4 Tablespoons of Baking Powder? I thought they were a little bitter.
I have only made the biscuits as written. Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
I love the soft texture of these biscuits, but mine turned out really, really salty tasting. Any tips?
So weird since there isn't any added salt in the recipe. Maybe try different brands of cheese?
Use unsalted butter
I made these tonight for dinner with a rotisserie chicken we made. They are so delicious! I did add a smidgen of garlic powder to the batter. And in the butter for the top. Other then that, followed the recipe to the letter. They taste incredible. I’d love them even if I wasn’t on Keto. Bravo!!
P.S. I am also a chef.
Mine went flat even after setting up in the fridge and turned out gummy inside. Hmmmm… Not sure what I did wrong.
Maybe your baking powder was bad – that is the only thing I can think of

Mine also went flat in the fridge and were very dense (didn't rise), but were still tasty. I used aluminum free baking power. Wonder if that made a difference?

I made these for the first time. Oh My Gracious! My whole family loves them. I gotta figure out net carbs. I want to eat them all. So good.

These are spectacular! Even the carbivores loved them. I had one of the leftovers with a sausage patty for breakfast this morning. I wasn't really missing bread on the keto diet, but my not-really-keto-more-lowish-carb hubby does so I made it for him. It's nice to have something we can both enjoy. Thanks again!

How much garlic powder do you add to the melted butter to brush on top?
A dash of garlic powder and a tablespoon of butter is usually what I use. Feel free to adjust to your preference
What if you don't have a 12" cast iron skillet??? Anything else you could recommend to bake them in. Love all your recipes!!!
You can try them in a 9×13 pan or split the biscuits between 2 8-inch cake pans

i have made this several times its great! truly the best low carb biscuits there are. i want to try tweaking a little to make low carb cinnamon rolls or maybe chocolate cakes our of them. thanks so much for posting and keep them coming you literally have the best low carb recipes.
Interesting…..wonder what putting the bread in refrigerator does to it? Normally you put bread in a warm place to rise. When you scooped out the bread dough did you start in the middle or sides? Just curious how they got their shape.
not really understanding your question. I used a cookie scoop to scoop the dough into balls.
Putting the bread in the refrigerator firms it up a bit so it stays in biscuit form.
Just wondering if we could just melt the cream cheese and the Mozzarella cheese together in the microwave like we do for fathead dough ?
You can try it.
I would scoop the biscuits on the edge of the skillet first to give it structure and fill in the middle scoops last, 🙂
