Eggnog Pound Cake Recipe for eggnog haters
First of all, I don’t drink eggnog. I’m sure it is great (with lots of rum or bourbon in it), but I haven’t gotten the courage to try it yet. That being said, I loved this pound cake. It was SO good! It smelled heavenly while it was baking. I couldn’t wait to get it out of the oven and try a piece. This cake has a little bit of spiced rum in it. I used Captain Morgan’s. I bought a miniature and it was enough to make two loaves and glaze them both. This would make a great homemade gift for neighbors and friends. It would also be a sweet ending to your holiday meal.
Eggnog Pound Cake

- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 (3.4 oz) package instant vanilla pudding
- 2 1/4 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1 1/2 cups of regular eggnog
- 1 Tbsp spiced rum (Captain Morgan’s)
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 1/8 tsp nutmeg
- 1 Tbsp spiced rum
- 1 1/2 – 2 Tbsp milk
Preheat oven to 350 degrees. Spray loaf pan with non stick spray with flour.
In the bowl of an electric mixer, beat together butter and sugar until light and fluffy, about 2 minutes. Add eggs, mixing until well combined. Add pudding mix.
In a small bowl, combine flour, baking powder, salt and nutmeg. Slowly add 1/3 of the flour mixture to batter. Pour half of the eggnog. Slowly add 1/3 flour mixture. Add remaining eggnog, spiced rum and vanilla. Add remaining flour mixture. Mix just until combined.
Pour batter into prepared loaf pan. Bake for 50-60 minutes. Remove from pan and cool completely.
Whisk together powdered sugar, nutmeg, spiced rum and milk. Pour over cooled cake.
