Diet 7UP Lemon Blueberry Cake


This is a variation on a Weight Watchers recipe. I'm not doing Weight Watchers, but I am always on the look out for a good dessert that won't have me (really Chicken Legs) popping buttons off my pants! This is one such dessert. I had some fresh blueberries and decided they would be great in a lemon cake.  I was right - this cake was fantastic!  It was light and moist.  You would never know it didn't have oil or eggs in it.  I topped the cake with some cool-whip.  It was a great guilt-free treat!



Diet 7UP Lemon Blueberry Cake
(Printable Recipe)

1 box lemon cake mix
2 egg whites
10oz Diet 7UP
1 cup blueberries

Preheat oven to 350 degrees.  Whisk together cake mix, egg whites and Diet 7UP. Fold in blueberries.  Pour cake into a greased 9x13 pan and bake for 30 minutes.  Top with cool-whip.

I was looking for blueberry cake recipes this morning. Sounds like a very good one to try!

Yum, we love berry loaded cakes and a "light" version just makes it better. :)

Btw,I've seen the same thing done with brownie mixes. It never dawned on me to try a cake mix. Cool!

I made a strawberry 7-Up cake last week, and was looking for another recipe to use up the rest of the 2-lifer. This looks great!
