Taco Rice

This recipe is adapted from one of my favorite blogs, Frosted Bake Shop.  I have made several of Amy's recipes and loved them all.  I especially love that they are made for real life - quick and easy.  I need quick and easy recipes to ease back into my daily routine after the holidays!

I love Mexican/Tex-Mex food.  I prefer to eat it at home - I don't stuff myself silly like I do at the Mexican restaurant.  I am always looking for a way to mix up taco nights and this was perfect.  It took less than 30 minutes from start to finish.   It makes a ton, so we had it two nights.

Taco Rice

1 lb. ground beef
1 packet taco seasoning
3/4 cup water
2 8 oz. cans tomato sauce
1 can black beans, drained
2 cups cooked white (I used Uncle Ben's Ready Rice)
tortilla or corn chips
your favorite taco toppings - salsa, cheese, sour cream, lettuce, tomatoes, etc

Brown the meat in a skillet and drain off fat (I use a collander).  Return the meat to the skillet; add the taco seasoning and water, mix and simmer for 5 minutes.  Stir in the tomato sauce, black beans and rice.   Heat in skillet for 5 -10 minutes, until heated through.   Serve over tortilla or corn chips and top with your favorite taco toppings.

  1. This is the type of dish I really enjoy rice in and yours looks very good. I have the same Mexican restaurant problem and am usually full on chips and salsa when the meal arrives.

  8. We enjoyed this, but I think next time, I'll sub one of the tomato sauces with the spicy Mexican El Pato tomato sauce. The Pioneer Woman turned me onto it with her burrito recipe!

  9. Just wanted to stop by and let you know that I made this recipe this wee... definitely a keeper. The combination of the warm taco rice with the lettuce, tomato, cheese, sour cream and salsa toppings was excellent. Excellent job on the recipe - and your photos are beautiful!
