This chicken tasted as good as it looks. It was delicious!! This was a really quick and simple weeknight meal. We grilled this chicken, because that is what we do. Chicken Legs is a master griller and it makes dinner a breeze for me. If grilling isn't your thing, you can pan sear the and finish it off in the oven.
This is such a versatile recipe. You could use this chicken for fajitas, serve it on a bun with some pepper jack cheese or use chicken wings instead of boneless chicken breasts. All of those options sound amazing to me! Can't wait to try them all!
Taco Chicken

2 Tbsp taco seasoning mix (from 1-oz package)
1 tsp dried oregano leaves
2 Tbsp olive oil
1/2 cup salsa
1/2 teaspoon ground cumin
4 boneless skinless chicken breasts (about 1 1/4 lb)
1/4 cup barbecue sauce
2 Tbsp chili sauce
Combine first 5 ingredients. Pour over chicken and let chicken marinate in the refrigerator for several hours (I let the chicken sit in the refrigerator all day).
Combine barbecue and chili sauce. Set aside. Place chicken on grill; cook 10 to 15 minutes, until done. Baste chicken with barbecue sauce mixture once on each side before removing from grill (during the last few minutes of grilling).
*If you don't want to grill the chicken - Pan sear the chicken for 2-3 minutes on each side and then bake at 400 for about 10 minutes, basting with the bbq mixture.*

I'm loving that chili sauce in this recipe. I have a chapter in my cookbook database called "Make it Tonight"... which is full of easy weeknight meals. This one is getting added.
could you do this with bone-in chicken breasts?
Taste as good as it looks, it was wonderful then.
Stacy - I think this would be great with bone-in chicken breasts. They will just have to cook longer.
