Can you believe Easter is this weekend?  If you are like us, you will have some leftover ham from your feast on Sunday.  This recipe is a great way to use up some of that Easter ham.  I found this recipe over at Tasty Kitchen and immediately decided to give it a try.  It was fantastic!!

Chicken Legs was the head chef on this dish.  He whisked up the sauce while the oven preheated and this was in the oven in no time.  We used a rotisserie chicken from Costco – it is one of our favorite time savers.  This casserole was creamy, cheesy and full of great flavors.  We both thought it was absolutely delicious.  This is definitely going into the dinner rotation.

ingredients:

  • 6 cups diced cooked chicken (1 whole rotisserie chicken)
  • 8-oz diced fully cooked honey ham
  • 8 slices baby swiss cheese
  • 4 Tbsp butter
  • 4 Tbsp flour
  • 3-¼ cups milk
  • 2 Tbsp lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp kosher salt
  • ½ tsp paprika
  • ½ tsp pepper
  • 1-½ cups panko bread crumbs
  • 6 Tbsp butter, melted
  • ½ tsp seasoning salt
  • 1-½ tsp dried parsley

instructions:

  1. Preheat oven to 350ºF.
  2. Light spray a 9×13 pan with cooking spray.  Put chopped chicken and ham in baking dish.  Cover with baby swiss cheese slices.
  3. Prepare the sauce.  In a large pot, melt butter.  Add flour and stir to form a roux.  Slowly whisk in milk.  Whisk until smooth.  Continue whisking until sauce starts to thicken (2-3 minutes).  Remove from heat and add mustard, lemon juice, salt, paprika and pepper.  Stir to combine.  Pour sauce evenly over the casserole.
  4. Combine all the ingredients for the topping and sprinkle over the casserole.
  5. Bake uncovered for 45 minutes or until top is golden brown.  Allow to cool 5 minutes before serving.

  1. This is AWESOME! I divide it into three foil containers and make 3 freezer meals for my college kids. It doesn't take me 2-3 minutes for the roux to thicken, more like 15ish.

    1. This is absolutely AMAZING!!!!!! My one and only complaint/concern is, water pools at the bottom of it. I had to take a bunch of napkins and soak up all the water.

  4. Made a 1/2 recipe, it's in the oven right now. I tweaked the recipe a bit due to ham being sodium laden, I cut back on the kosher salt and instead of using seasoned salt in the breadcrumbs I used a no salt seasoning that complements poultry/pork dishes.

  5. I've made this for everyone who will sit still long enough to eat it. I just love it. I've made a point to share the recipe with everyone I know!
