This chicken tasted as good as it looks. It was delicious!! This was a really quick and simple weeknight meal. We grilled this chicken because that is what we do. Chicken Legs is a master griller and it makes dinner a breeze for me. If grilling isn’t your thing, you can pan-sear the and finish it off in the oven.
This is such a versatile recipe. You could use this chicken for fajitas, serve it on a bun with some pepper jack cheese or use chicken wings instead of boneless chicken breasts. All of those options sound amazing to me! Can’t wait to try them all!
Taco Chicken
(Printable Recipe)
- 2 Tbsp taco seasoning mix (from 1-oz package)
- 1 tsp dried oregano leaves
- 2 Tbsp olive oil
- ½ cup salsa
- ½ teaspoon ground cumin
- 4 boneless skinless chicken breasts (about 1 ¼ lb)
- ¼ cup barbecue sauce
- 2 Tbsp chili sauce
Combine first 5 ingredients. Pour over chicken and let chicken marinate in the refrigerator for several hours (I let the chicken sit in the refrigerator all day).
Combine barbecue and chili sauce. Set aside. Place chicken on grill; cook 10 to 15 minutes, until done. Baste chicken with barbecue sauce mixture once on each side before removing from grill (during the last few minutes of grilling).
*If you don’t want to grill the chicken – Pan sear the chicken for 2-3 minutes on each side and then bake at 400 for about 10 minutes, basting with the bbq mixture.*
I used Heinz Chili Sauce
What kind of chili sauce do you use? I've never cooked with it before. Thanks!
I see that you say this recipe can be done with bone in chicken. What about with the skin on? Can it then be baked in the oven? At what temp and for how long. I do not use a grill. Thank you.
Tammy – I never cook chicken with the skin on. I don't like it; you can leave the skin on if you prefer. If you bake it, bake it at 450 for 30-35 minutes.
Thank you stephanie. I live in a condo and they do not like BBQ grills. I just find that when I have company over, I don't like to be bothered with sauteeing and anything that keeps me away from guests. When I put something in the oven, I don't have to watch it so much.
Stacy – I think this would be great with bone-in chicken breasts. They will just have to cook longer.
Taste as good as it looks, it was wonderful then.
could you do this with bone-in chicken breasts?
I'm loving that chili sauce in this recipe. I have a chapter in my cookbook database called "Make it Tonight"… which is full of easy weeknight meals. This one is getting added.
Looks and sounds terrific Steph. It's on the try list.
