If you do make this ahead of time, don’t add the Doritos until you are ready to serve. The chips will get soggy and nobody wants to eat soggy Doritos!
We ate this pasta salad for lunch and dinner on the same day. It was that good!! To cut down on the prep time, I used rotisserie chicken in this recipe. It is my number one shortcut in the kitchen. I prefer the rotisserie chickens from Costco – they are seasoned perfectly, big and cheap!
The dressing on this pasta salad was really delicious! Lime juice, cumin, chili powder, cilantro, salsa, and olive oil. If you don’t like cilantro, you can leave it out or substitute fresh parsley. This would be great for summer potlucks! You could even make it without the chicken and serve it as a side dish.

Chicken Fajita Pasta Salad with Doritos
Ingredients:
- ¼ cup lime juice
- 1 Tbsp cumin
- 1 tsp chili powder
- ⅓ cup fresh cilantro, chopped
- ½ cup olive oil
- 1 (15-oz) can black beans, rinsed and drained
- 1 (11-oz) can Mexicorn, drained
- 1 cup salsa
- 2 tomatoes, chopped
- 8- oz bowtie pasta, cooked
- 2½ cups chopped cooked chicken
- 1 cup shredded cheddar cheese
- 2 cups crushed Doritos
Instructions:
- Whisk together lime juice, cumin, chili powder and cilantro. Slowly drizzle in olive oil and whisk until combined.
- In a large bowl, combine black beans, corn, salsa, tomatoes, cooked pasta, chicken, and cheese.
- Pour lime dressing over pasta mixture and toss to combine.
- Right before serving, gently mix in crushed Doritos.
