This Green Chile Chicken Enchilada Casserole is a new favorite at our house. It is super easy to make and tastes AMAZING! There are only 5 simple ingredients in this recipe – chicken, tortillas, green enchilada sauce, sour cream, and cheese. I am not normally a fan of green enchilada sauce, but it really works in this dish. We gobbled this up and both went back for seconds. This is definitely going into the dinner rotation!
How to Make Cheesy Chicken Enchilada Casserole
This casserole is super easy to make. Remove the skin from a rotisserie and pull the meat from the bone. Chop the chicken and set aside. Tear some corn tortillas into bite-sized pieces. Assemble the casserole – place half of the chicken in the bottom of a baking dish. Top with half of the enchilada sauce, some sour cream, half the tortillas, and shredded cheese. Repeat the layers and bake.

- Don’t have rotisserie chicken? 4 to 5 cups of any chopped cooked chicken will work just fine.

Chicken Enchilada Casserole
Equipment:
Ingredients:
- 1 rotisserie chicken
- 1 (28-oz) can green enchilada sauce
- 1½ cups sour cream
- 10 corn tortillas
- 4 cups shredded Mexican cheese blend
Instructions:
- Preheat oven to 375ºF. Spray a 9x13x2-inch baking dish with cooking spray.
- Remove skin from rotisserie chicken and discard. Remove meat from bones and chop the chicken.
- Tear corn tortillas into bite-sized pieces.
- Assemble the casserole by layering half of the chicken in the prepared baking dish. Top with half of the enchilada sauce, half of the sour cream, half of the tortilla, and half of the cheese. Repeat the layers.
- Cover the casserole dish with aluminum foil and bake for 40 minutes. Remove the foil and bake an additional 10 minutes or until bubbly.

I used 16 street taco size corn tortillas, it turned out a bit soupy. Would more tortillas solve this problem? Otherwise fantastic. I seasoned w Tajmin and added hot sauce.
Thanks! This was yum for the whole family. I served it with your Mexican chopped salad and some refried beans. I also made some guacamole, chopped some tomatoes, and had our favorite tortilla chips. Great dinner.
Simple, good and the green sauce flavor did not overwhelm the dish. I used flour tortillas because I did not have corn, and they worked fine. Next time I will try adding more seasoning to the chicken.
Making 2 9″ x 13″ dishes tonight for 2 families. I will add a tbl of Mexican Blend Seasoning to the sour cream. Can’t imagine this will not turn out being a 5 star rating. We all love every ingredient!!
