These Guinness Cupcakes are the perfect St. Patrick’s Day treat! Even if you aren’t particularly fond of beer, I promise you will love these yummy cupcakes! The cupcakes are super chocolatey, moist, and delicious. The Baileys Buttercream Frosting really puts this dessert over the top! OMG! One bite and you will be blown away!
How to Make Guinness Cupcakes
This dessert is easy to make with only a few simple ingredients. In a large mixing bowl, combine chocolate cake mix, instant chocolate pudding, sour cream, eggs, Guinness stout beer, and oil. Mix on medium speed with an electric mixer for 2 minutes. Place cupcake liners in two muffin pans. Using a large cookie scoop or ice cream scoop, divide batter between the muffin cups. Fill muffin tins 2/3 full. Bake in a preheated oven until a toothpick inserted into the middle of the cupcake comes out clean. Cool cupcakes completely on a wire rack before frosting.
To make the buttercream, beat unsalted butter in the bowl of a stand mixer until light and fluffy. Slowly add powdered sugar, heavy whipping cream, and Baileys Irish cream liqueur to the bowl. Mix on medium speed until the frosting is light and fluffy.
Transfer frosting to a pastry bag and pipe on top of the cooled cupcakes. Add sprinkles if desired.
Helpful Tips & Frequently Asked Questions
- I use canned Guinness beer. It has the nitro cartridge in it and tastes like the beer right out of the tap. You can definitely use bottled Guinness if that is what you prefer.
- Add a few teaspoons of espresso powder to the batter for a deeper chocolate flavor.
- If you don’t have a stand mixer, you can make the frosting in a large bowl with a hand mixer.
- Do the cupcakes taste like beer? No. I am not a beer drinker and I did not think the cake tasted like beer.
- Adjust the amount of Baileys Irish Cream to your personal preference. You can substitute heavy cream for some of the liqueur In the frosting.
- If you don’t like Baileys, you can frost the cupcakes with cream cheese frosting.
- For an extra fancy presentation, add a drizzle of chocolate ganache on top of the frosting.
- Can cupcakes be frozen? Yes! You can freeze the cupcakes frosted or unfrosted.
- Bake the cupcakes and let them cool completely. Wrap in plastic wrap and place in freezer bags.
- The cupcakes will keep for up to 3 months.
- Store the frosted cupcakes in an airtight container. You can store them in the refrigerator or at room temperature.

Ingredients:
The BEST Chocolate Cake
- 1 box devil’s food cake mix
- 1 (3.9-oz) package Jello instant chocolate pudding mix
- 1 cup sour cream, not low fat
- ¾ cup vegetable oil
- 4 large eggs
- ¾ cup Guinness beer
Seriously, the BEST Vanilla Buttercream
- 1 cup butter, room temperature
- 6 cups powdered sugar, may need a little more
- 6 Tbsp heavy whipping cream
- 2 to 3 Tbsp Irish Cream liqueur
Instructions:
Guinness Cupcakes
- Preheat oven to 350ºF.
- In a very large bowl, mix together all ingredients. The batter will be thick. Pour batter into cake pan of choice.
- For cooking time, use the cooking times on the back of the devil’s food cake box as a guide. Do the toothpick check after the suggested cooking time; if it’s not done check on it every 5 mins after that.
- Cool and frost with buttercream (recipe below).
Bailey's Buttercream Frosting
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter until smooth and creamy, 2 to 3 minutes.
- With the mixer on low speed, add powdered sugar, whipping cream, and Irish cream liqueur; mix until light and fluffy.
- If necessary, gradually add more powdered sugar to reach desired consistency.
