This bread is so delicious.  It is not too sweet and incredibly moist.  I gave this cake as my Christmas gift to friends and neighbors.  Everyone went nuts over it.  The best part about this bread is that it is super easy to make.  This only takes about 5 minutes to mix together and it makes the house smell heavenly while it bakes.  This is a great treat to make ahead of time; I actually think it tastes better the second day.  This is a great accompaniment to the Slow Cooker Breakfast Casserole I am posting tomorrow. Give this a try for Easter brunch or for dessert with a big scoop of vanilla ice cream on top.

Yield: 1 (9-inch) loaf

Cinnamon Swirl Quick Bread

prep time: 5 MINScook time: 45 MINStotal time: 50 mins

ingredients:

  • 2 cups flour
  • 1-1/2 cups sugar, divided
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1-1/4 cup buttermilk
  • 1 tsp vanilla
  • 1 egg
  • 1/4 cup canola oil
  • 1 Tbsp cinnamon
Glaze

  • 1/4 cup confectioners’ sugar
  • 2 tsp milk

instructions:

  1. Preheat oven to 350ºF. Lightly spray a 9×5-inch loaf pan or line with parchment paper.
  2. Combine the flour, 1 cup sugar, baking soda, salt, buttermilk, egg, vanilla and oil; stir  just until moistened.
  3. In a small bowl, combine cinnamon and remaining sugar.
  4. Pour half of the batter into bread pan; sprinkle with half of the cinnamon-sugar. Spread with remaining batter and sprinkle with remaining cinnamon-sugar; cut through batter with a knife to swirl. I go back and forth both ways in the pan to really mix it up.
  5. Bake for 45-50 minutes or until a toothpick inserted near the center comes out clean. Allow to cool for 10 minutes in the pan before removing to wire rack.  Cool completely.
  6. Combine confectioners’ sugar and enough milk to reach desired consistency; drizzle over loaf.

  1. I was out of buttermilk and tried the milk and vinegar substitute and the batter was really soupy? I think with the substitute the milk amount would be smaller? I will try it again.

  2. I made this but i must of "swirled" too much because cinnamon was everywhere and not just the middle like yours looks,it was good.Just did not look like yours.Thanks

  3. This looks great, I love breakfast breads! I always use SR flour and omit the salt and soda, does this make a difference? I haven't tried this recipe yet but wanted your opinion on plain vs. SR flour, Thanks!

    1. It will make a difference. I couldn't tell you if it would ruin the bread to use self-rising and omit the baking soda. The self-rising will have more salt and baking soda than the recipe calls for. You could try it, but I would recommend using all-purpose flour.
