I found this recipe in a cookbook I bought while we were in Disney for the Epcot International Food and Wine Festival this fall. The recipe was from a different food festival (Barbecues and Brews), so I didn’t get to sample it in person. I could not wait to get home and give it a whirl! The cupcakes are super simple and taste AMAZING! How could a yummy maple bacon cupcake taste bad?!?!

The cupcakes start with a box of yellow cake mix. Swap out the oil for bacon grease and stir in a ton of cooked bacon. OMG! I had to tweak Disney’s recipe for the frosting. The recipe didn’t turn out looking like the photo (at all). It needed some brown sugar and a lot more maple to work for us. I garnished the cupcakes with some chopped pretzels and an extra piece of cooked bacon. *swoon*

Disney’s Piggylicious Bacon Cupcakes
24 cupcakes

    Cupcakes

  • 1 box yellow cake mix, plus water and eggs called for in mix
  • Equal amount of bacon fat to replace oil in mix
  • 12 slices bacon, cooked crisp and chopped fine
  • Frosting

  • 1 (8oz) package cream cheese, softened
  • ¼ cup butter, softened
  • ¼ cup real maple syrup
  • 6 Tbsp brown sugar
  • 2 ½ cups powdered sugar

For Cupcakes: Follow directions for cake, replacing oil with bacon fat. Fold in cooked bacon. Bake according to package directions. Cool completely.

For Frosting: In the bowl of an electric mixer with paddle attachment, beat together cream cheese and butter until light and fluffy. Beat in brown sugar and maple syrup. Slowly add powdered sugar.

Frost cupcakes and garnish with chopped pretzels and additional bacon, if desired.
