How to Make Gingerbread Truffles

This delicious treat is very easy to make with only a five simple ingredients. Place gingersnap cookies in a food processor and pulse until the cookies become fine crumbs. In the bowl on an electric stand mixer fitted with the paddle attachment, add the cookie crumbs, softened cream cheese, Nutella, and ground ginger. Mix on low speed until combined. Using a small cookie scoop, scoop the cookie mixture and shape into balls—place balls on a baking sheet lined with parchment paper. Place the pan in the fridge for at least 30 minutes. 

Place candy melts in a microwave-safe bowl. Melt in the microwave according to the package directions. Remove the cookie balls from the refrigerator. Using a fork, dip the cookie balls into the melted chocolate. Shake off excess chocolate and place on the cookie sheet. Top with sprinkles and let the chocolate coating set up.
