I’ve been making this Rotel Hot Sausage Dip for years. A co-worker brought this dip to a potluck and I loved it. I immediately asked for the recipe. It quickly became a staple at all of our get-togethers and tailgates over the years. I mean how could it not be – sausage, cream cheese, sour cream, Rotel, and cheddar cheese. What’s not to like? Everyone goes crazy over this dip and I never have any leftovers. Success!
How to Make Baked Rotel Sausage Dip
To make this dip, start with browning some sausage. Next, mix together the cooked sausage, cream cheese, sour cream, Rotel diced tomatoes and green chiles, and cheese. Spread the dip into a baking dish and bake.
- I used Jimmy Dean Hot Sausage.
- You can substitute turkey sausage or ground beef or turkey for the pork sausage if you prefer.
- I used cheddar cheese in this dip. Feel free to use any cheese you prefer.
- You can use low-fat sour cream and low-fat cream cheese.
- Can Rotel Sausage Dip be made in the crockpot? Yes! You can mix together the dip and heat it in the slow cooker.
- Is Rotel Sausage Dip spicy? We did not find this dip to be spicy. If you are worried this dish might be too spicy for your guests, you can adjust the heat by using regular sausage and a can of mild diced tomatoes and green chiles.
- You can substitute 2 cans of diced green chiles for the can of Rotel.
- Is this dip gluten-free? Yes! As long as you use gluten-free sausage, the dip will be gluten-free.
- Can Rotel Sausage Dip be made in advance? Yes! You can assemble the dip ahead of time and refrigerate until you are ready to bake and serve the dip.
- Can Rotel Sausage Dip be frozen? Yes! You can assemble the dip and freeze it unbaked for later. If you want to bake it from frozen, bake it covered for 15 minutes and uncovered for 30 minutes. You can also thaw the dip completely and bake as directed below.
Hot Sausage Dip for a Crowd
I like to serve this dip with some tortilla and corn chips. It is also good with celery sticks and bell pepper slices for a gluten-free/low-carb option. It is delicious either way.

Hot Sausage Dip
Ingredients:
- 1 lb hot sausage Jimmy Dean
- 8- oz cream cheese softened
- 8- oz sour cream
- 2 cups shredded cheddar cheese
- 1 10-oz can diced tomatoes and green chilies, drained
Instructions:
- Preheat oven to 350ºF.
- In a large skillet, cook sausage until no longer pink. Drain fat.
- In a large bowl, combine all ingredients and put in an 8-cup baking dish.
- Bake for 30 minutes or until bubbly. Serve with corn and/or tortilla chips.
