This is a big weekend. We have Cinco de Mayo and the Kentucky Derby. I view both as a great excuse to celebrate. Am I right?!

I am not a horse racing fan, but we always watch the Kentucky Derby. I feel the best way to watch the race is with a Mint Julep in one hand and a slice of this pie in the other. This pie is a cross between a chocolate chip cookie and pecan pie. It is great slightly warm with a big dollop of bourbon whipped cream.

ingredients:

Pie

  • 1 regular frozen pie crust (not deep dish)
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2/3 cup flour
  • 1 cup finely chopped pecans
  • 1 cup chocolate chips
Bourbon Whipped Cream

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 Tbsp Maker’s Mark Bourbon

instructions:

  1. Preheat oven to 325ºF.
  2. Melt butter, and cool for about 5 minutes.  Combine flour and sugar.  Whisk in melted butter, eggs and vanilla.  Stir in nuts.
  3. Sprinkle chocolate chips on the bottom of the pie crust. Pour pecan mixture over chocolate chips.
  4. Bake for 1 hour.  Serve with Bourbon Whipped Cream.
  5. To make the cream, Whip together heavy cream, powdered sugar and bourbon. (I chill my mixing bowl in the freezer for 5-10 minutes before adding the cream and sugar). Whip at high speed for 1-2 minutes.

  1. I made this pie using six small individual paper tart pans without a bottom pie crust. I used non-stick spray. I also added a few tablespoons of Makers’ Mark. Turned out great. I’m up at approx 6,500 elevation and I did not adjust the recipe but for the MM. I baked them for 40 minutes. Will be making this again!

  2. Just so you don't get in trouble change the name to Kentucky Racy Day Pie. It sure looks rich, yummy and too good to be eaten.
