One Pot Chili Cheese Pasta
This One Pot Chili Cheese Pasta was ready in under 20 minutes, and everything cooks in the same skillet, even the pasta! Woohoo! This dish was inspired by one of my favorite tailgating dip – Chili Cheese Dip. The dip is incredible and it always the first thing to go at our tailgates! I decided to take those amazing flavors and put it in an easy one pot pasta dish. If the dip was good, I was sure that it would be even better in a yummy pasta dish. I was right this stuff was amazing! We both gobbled this up and went back for seconds. Chicken Legs has already requested this for dinner again next week. It is perfect for watching football!!
One Pot Chili Cheese Pasta
ingredients:

1 (15-oz) can chili with beans

1 (15-oz) can petite diced tomatoes

1 garlic clove, crushed

2 tsp chili powder

8-oz uncooked campanelle or penne pasta

3 cups chicken broth

4-oz cream cheese, softened
- 1 cup shredded cheddar cheese
instructions:

In a large skillet, combine chili, tomatoes, garlic, chili powder, pasta and chicken broth. Bring to a boil. Cover and reduce heat to low.

Cook for 15 to 17 minutes, until pasta is done and most of the liquid has been absorbed.
- Stir in cream cheese until incorporated. Remove skillet from heat. Top pasta with cheddar cheese. Serve immediately.
I do not always feel like cooking so, when I do I cook a lot and freeze the dish. It looks like this recipe could do that, minus the cheese on top. If so, like most recipes take out the day before using and put in refrigerator to unthaw, then reheat on stove top an once heated add cheese on top?

Do you drain the tomatoes?
