Sweet pineapple and coconut pie – what’s not to love?!?! We served the pie as is, but it would be great with a dollop of whipped cream or vanilla ice cream.
This Pineapple Pie only takes a couple of minutes to whip up. Basically just whisk everything together, pour into a deep dish pie crust and bake. Easy Peasy!! The pie can be served warm or cold. I prefer to make this pie a day in advance and refrigerate it overnight. I take the pie out of the refrigerator about 30 minutes before serving. If you want to serve the pie warm, just pop each slice in the microwave for a few seconds.
