My first time having Pineapple Casserole was on a trip to the beach a few years ago. It was on the menu at one of the restaurants. I gave it a shot and loved it. I came home and started making my own version ever since! Bread cubes, crushed pineapple, sugar, eggs, butter, lemon juice, nutmeg, and brown sugar. We always serve it as a side dish, but you could almost serve it as a dessert. It is almost a Pineapple Bread Pudding. However you serve it, it is sure to be a hit. This is our go-to side dish for our Easter ham, summer cookouts, and holiday meals.
How To Make Pineapple Casserole
This casserole is super easy to make with only a few simple ingredients. In a large bowl, beat together softened butter and sugar with an electric mixer. Mix in eggs and beat well to blend. Stir in crushed pineapple with pineapple juice, lemon juice, and nutmeg. Carefully fold in bread cubes. Spoon pineapple mixture into prepared casserole dish. Sprinkle brown sugar on top of pineapple mixture. Bake in the oven for 45 minutes, until golden brown. Let the casserole cool for 10 to 15 minutes before serving.

Pineapple Casserole
Ingredients:
- ½ cup butter, softened
- ¾ cup sugar
- 4 eggs
- 1 (20-oz) can crushed pineapple, undrained
- 1 tsp lemon juice
- ¼ tsp nutmeg
- 3 cups stale white bread, cubed
- 2 Tbsp brown sugar, optional
Instructions:
- Preheat oven to 350ºF. Lightly spray an 8×8 or 9×9-inch pan with cooking spray. Set aside.
- In a medium mixing bowl cream butter and sugar and add eggs and beat well to blend. Add pineapple and carefully stir to blend, add lemon juice and nutmeg. Fold in bread cubes.
- Spoon pineapple mixture into prepared baking dish. Sprinkle with brown sugar, if desired.
- Bake uncovered for 45 minutes.

What type of bread works best? I see at the top it says French bread and in the recipe it says stale white bread. Would a regular sliced loaf of white bread work?
