{Slow Cooker} Bacon Cheeseburger Soup

I am a big fan of slow cooker soups. They are such a life-saver during the week.  I usually dump all the ingredients in the slow cooker insert the night before and keep it in the fridge overnight. I put the insert in the slow cooker first thing in the morning and dinner is done! It's like magic!

This soup is super delicious. It is a hearty soup with lots of cheese, beef and bacon. This is a thick soup. Feel free to add more chicken broth before serving to get it to your desired consistency.

We both LOVED this soup. It is definitely going to be a staple at our house this Fall and Winter.

{Slow Cooker} Bacon Cheeseburger Soup
serves 6-8
(Printable Recipe)

  • 32oz bag frozen shredded hash browns
  • 1 lb hamburger, cooked
  • 1/2 lb bacon,  cooked and chopped
  • 2 lb Velveeta cheese
  • 32 oz chicken broth
  • 1 tsp pepper
  • 2 Tbsp dried minced onion flakes
  • 1 tsp garlic powder
  • 2 tsp worcestershire sauce

Combine all ingredients in 6-quart slow cooker.  Cook on low for 8-10 hours.  Serve with cheddar cheese and bacon, if desired.

  5. Stephanie, would eliminating the hash browns affect the outcome? I need to avoid potatoes, no matter how much I love them! Any suggestions for an alternative? BTW, I love your recipes (the low-carb ones particularly although I drool over all of the rest)...recently passed along a bunch of your tailgating recipes to a friend looking for something new for a college football game tailgate :)

    1. PMcmil5450 - the potatoes are a big part of this recipe. They break down and thicken up the soup. I am not sure what you could substitute.

    4. I would maybe try subbing shredded or cubed cauliflower. It may not work as a thickener, but could definitely help.

    1. Absolutely! I love to use that precooked bacon - such a time saver.

    1. I just cooked the hamburger meat and dumped it in the slow cooker. I didn't season it separately.

    1. I didn't freeze any of the leftovers, but it should be fine if you do.

  21. I just recently broke a tooth, and have to deal with this fragile temporary crown for the next three weeks. It's only been a few days, but just knowing that I can't eat cheeseburgers for the next month makes me want one so much more. So then I find this -- a "cheeseburger" that breaks the rules -- and now I MUST make it. I admit I'll probably leave out the bacon (since I don't normally get bacon on my cheeseburgers) and will probably heavily season the ground beef instead.

I definitely needed to add additional broth about 20 minutes before serving both times I've made it because it DOES get very thick (almost like a casserole), so anyone wanting to make this should probably make sure they have more broth on hand if they feel the same (I actually had to DOUBLE the amount of broth, and it was still a thick soup). Excellent soup, though! Great recipe!
