Beef Enchilada Soup {Slow Cooker}

This is one of the best soups I've made. It tasted amazing! The best part about this recipe is you just dump everything in the slow cooker and let it simmer all day long. Chicken Legs wasn't looking forward to this soup, but as soon as he tasted it he loved it! I knew he would. He gets like that sometimes - thinking he won't like something when I know he will!. I think it helped that I used stew meat in the soup instead of ground beef. It was much a heartier soup. More manly!

I used a store bought enchilada sauce for this recipe because I had some in the pantry. If you don't want to use store bought, here is my recipe for Homemade Enchilada Sauce (here). Either way will be delicious. This would also make a great freezer meal. Throw everything in a gallon freezer bag and freeze it until you are ready to cook. Can't beat this for a quick and yummy dinner!

Beef Enchilada Soup {Slow Cooker}
serves 4-6
(Printable Recipe)

  • 1 lb beef stew meat
  • 28 oz can red enchilada sauce
  • 10 3/4 oz can Condensed Cheese Soup (can use Fiesta Cheese Soup)
  • 15 oz can black beans, drained
  • 11 oz can whole kernel corn, drained
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 cup shredded cheese
  • Optional Toppings: extra cheese, sour cream, crushed tortilla chips

Place all ingredients, except toppings, in slow cooker. Cover and cook on low for 8-10 hours. Serve with optional toppings, if desired.

Freezer Meal Option: Place all ingredients, except toppings, in a gallon freezer bag. Freezer. When ready to cook, remove frozen contents from freezer bag and place in slow cooker. Cook on LOW for 8-10 hours.
