Pin This RecipeWe have another big weekend of NFL playoff games this weekend. Chicken Legs and I will be parked in our den watching them all and eating this awesome Cracked Out Corn Dip. Corn, sour cream, cream cheese, cheddar, bacon, and ranch. OMG! SO good! We could not stop eating this dip! It just kept calling my name. I ate way too much of this!
This dip can be made ahead of time and refrigerated until you are ready to bake and eat it. I used frozen Silver Queen Corn in the dip because it is my favorite. If you don’t have Silver Queen Corn or don’t like it, just use regular yellow corn kernels. Either way, it will taste great. We served this with some Fritos. It was a winner!
Have you ever added any Franks Buffalo sauce to kick up the heat a bit?
Can you substitute Colby cheese for cheddar?

When I make this, I add a can of black beans and Rotel to it!! Sooooo delicious!!
What can you do with the leftovers? Can it be frozen? How long will it last in fridge?
I think this would be good with a can of beans (drained) added.

Would like to bake this in my pellet grill and get some smoke taste. How important is it to cover with foil? Would like to cook it without the foil.

Can this be made in crockpot OR precooked then just heat back up in microwave the next day? We are going camping and I won’t have a oven just microwave so thought I could cook it night before then reheat?
The crockpot or microwave should work fine. Everything is already cooked. You are just heating it up.

I used 2 bags of frozen Mexican street corn from Trader Joe’s and it took it up a notch! This is a wonderful recipe!
