Pin This RecipeThese Fried Okra Cornbread Bites are a new favorite. Mini cornbread muffins with fresh okra mixed in the batter. OMG! SO good! They taste just like fried okra! I happen to LOVE fried okra, so these Fried Okra Cornbread Bites were right up my alley!!
These mini muffins are super easy to make with only 5 ingredients. Simply mix together okra, self-rising cornmeal, buttermilk, oil, and cheese. Spoon the mixture into a mini muffin pan and bake.
I loved the addition of the cheese to the okra muffins. I used cheddar cheese, but these would also be great with some pepper jack cheese. Really, any cheese you like would be good in these muffins.
Just an FYI – I used White Lily Self-Rising Buttermilk White Cornmeal Mix in this recipe. If you can’t find White Lily, you can use any brand of self-rising cornmeal mix. I like white cornmeal, but yellow is perfectly fine.
We served the okra cornbread bites as a side dish, but they would also be great as an appetizer for a spring/summer party. You could dip them in some ranch dressing – YUM! Fried Okra Bites
Ingredients:
- 1 cup fresh thinly sliced okra
- ¾ cup self-rising cornmeal mix
- ¾ cup buttermilk
- 2 Tbsp vegetable oil
- 1 cup shredded cheddar cheese
Instructions:
- Preheat oven to 450º F. Grease 24 mini muffin pan cups. Set aside.
- Microwave okra in an microwave-safe bowl for 1 minute.
- Combine okra, cornmeal mix, buttermilk, oil and cheese. Pour into prepared muffin pan.
- Bake for 10 to 12 minutes, until golden brown.
- Can be served warm or at room temperature.

OMG! Just made them with our garden fresh okra. Delicious. Think I might need to try and freeze thinly sliced okra so we can enjoy year round . Thanks for this recipe!
I freeze okra whole in gallon freezer bags. When ready to use, put what you need into a colander and rinse, easy to cut still frozen. They thaw quickly.
