We are big fans of the Waffle House. In fact, our Christmas morning tradition is having waffles at the Waffle House before we open presents! We all wear Santa hats. I take it up a notch and dress up in an ugly Christmas sweater and crazy Christmas tree glasses. The workers and kids in the restaurant love it! My family tolerates it! LOL! I'm just gonna say that these Fluffy Waffles are seriously the best waffles ever! Even better than the Waffle House! The best part is that they are really easy to make!! The key to getting the fluff is separating the eggs and whipping the egg whites until stiff. Folding in the egg whites makes these waffles so light and fluffy!!

I know you are going to ask me how many waffles does this make? Well, that will all depend on your waffle maker. I got about eight 7-inch waffles. My waffle iron doesn't make the super thick waffles. Just regular waffles. If you have a deep dish waffle maker, you will obviously get less waffles. This was enough to feed 4 people. The recipe is easy to double if you are feeding a crowd. You can even freeze any leftover waffles for later. Just pop them in the microwave for a quick breakfast later.

Fluffy Waffles

INGREDIENTS:


  • 1-3/4 cup flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 2 eggs, separated
  • 1-3/4 cup milk
  • 1/2 cup vegetable/canola oil

INSTRUCTIONS:


  1. Preheat waffle iron according to manufacturers directions.
  2. Sift flour, baking powder and salt.
  3. Combine egg yolks, milk and oil. Stir into dry ingredients.
  4. Beat egg whites until stiff. Fold into batter, leaving a few fluffs.
  5. Bake waffles according to waffle iron directions.

  1. Do you have a particular type of milk you would suggest for this recipe? I usually keep whole milk in the fridge, but would that be too much fat to get the waffles fluffy?
