Easy Bacon Cheeseburger Soup Recipe

I am a big fan of slow cooker soups. They are such a life-saver during the week.  I usually dump all the ingredients in the slow cooker insert the night before and keep it in the fridge overnight. I put the insert in the slow cooker first thing in the morning and dinner is done! It’s like magic! This Bacon Cheeseburger Soup has been on repeat at our house. It is so easy to make and always receives rave reviews!

How to Make Bacon Cheeseburger Soup with Velveeta

As I said, this soup is super easy to make. Simply dump all the ingredients in the crockpot and cook. That is it! This soup is super delicious. This is a hearty soup with loaded with hash brown potatoes and lots of cheese, beef, and bacon. This is a thick soup. Feel free to add more chicken broth before serving to get it to your desired consistency.

If you want to reduce the calories in this soup, use ground turkey, turkey bacon, and low-fat Velveeta cheese. I also suggest low-sodium chicken broth to make sure the soup isn’t too salty.

What to Serve with Soup

We both LOVED this soup. It is definitely going to be a staple at our house this Fall and Winter. We like to top the soup with additional bacon, cheese, and some parsley for color. We usually serve the soup with some Fritos and biscuits. Comfort food at its best!   • Combine all ingredients in 6-quart slow cooker. Cook on low for 8-10 hours. Serve with cheddar cheese and bacon, if desired.

Notes:

Can substitute turkey bacon for pork bacon.
Can substitute ½ cup of precooked bacon for freshly cooked bacon.
Can substitute ground turkey for ground beef.

  2. I’ve made this many times! Love it! I use diced can potatoes but put the in the last few hours. I also use Sharp Cheddar Velveeta instead of plain velveeta. Sometimes when recipes call for Chicken stock I use Turkey stocl instead. It is a little darker and a little more flavor!

  3. Made mine on the stove top added a bit more Worcestershire than called for and used simply hash brown from the dairy. Turned out great! Family loves it.

I definitely needed to add additional broth about 20 minutes before serving both times I've made it because it DOES get very thick (almost like a casserole), so anyone wanting to make this should probably make sure they have more broth on hand if they feel the same (I actually had to DOUBLE the amount of broth, and it was still a thick soup). Excellent soup, though! Great recipe!

  10. I just recently broke a tooth, and have to deal with this fragile temporary crown for the next three weeks. It's only been a few days, but just knowing that I can't eat cheeseburgers for the next month makes me want one so much more. So then I find this — a "cheeseburger" that breaks the rules — and now I MUST make it. I admit I'll probably leave out the bacon (since I don't normally get bacon on my cheeseburgers) and will probably heavily season the ground beef instead.

        1. Maybe try using shredded cheddar cheese and add some milk to make it creamy? I haven’t tried it myself, but it’s just an idea.

    1. PMcmil5450 – the potatoes are a big part of this recipe. They break down and thicken up the soup. I am not sure what you could substitute.

    3. I would maybe try subbing shredded or cubed cauliflower. It may not work as a thickener, but could definitely help.
