How to Make Salsa Verde Chicken Tater Tot Casserole

This casserole is super easy to make with only a few simple ingredients. In a medium saucepan over medium heat, melt butter. Whisk in flour and cook for one minute. Add chicken broth to the pan and whisk until smooth. Allow the sauce to thicken. Remove the pan from heat and stir in sour cream, diced green chiles, onion powder, garlic powder, and cumin. Season with salt and black pepper.

In a large bowl, combine shredded chicken, tater tots, shredded cheese, and the creamy sauce. Stir until thoroughly combined. Spread the chicken mixture into a baking dish that has been sprayed with nonstick cooking spray. Sprinkle extra cheese over the top of the casserole. Bake in a preheated oven until bubbly. Garnish with green onions and cilantro.

  1. Made this for my family and it didn’t disappoint. Used Sam’s club pre-cooked pulled chicken which is smoked and tasted really lovely in this recipe. My husband suggested adding some corn to it but we will see. Ha!

    1. I just bought some of Sam’s pulled chicken – I’ll try it in this dish next time! So glad you enjoyed it.

  2. Made this tonight. When my hubby and son asked what was for dinner, as soon as I told them, they both gave me that yuck face and said “I hate casseroles.” I know this and I’m used to this reaction but I still keep trying cause, guess what? I love casseroles!! I told them to trust me, that I had a feeling they would change their mind about this one. I didn’t have a rotisserie chicken on hand so I cooked my chicken breasts with Famous Dave’s Country Roast Chicken rub. Everything else, the recipe was followed to a “t”. THEY LOVED IT! I LOVED IT! We were scrapping the dish clean! Haha!! No more casserole doubt in this house!

  3. This was amazing. My son ate 1/4 of the pan the first night. My new fave and it’s not hard to make at all.

  4. Just made this tonight. Was delicious 🤤
I think it would also be good with shredded beef. This will be a regular on my menu. My boyfriend ate almost the entire casserole alone. He’s taking the leftovers tomorrow for work. Thank you for the great recipe!!

  5. I got lazy and didn't do the whole melted butter/flour in a pan thing. I just mixed all the ingredients in the baking dish and threw it in the oven. It was so, so good! Thank you for the recipe!

  6. Had a similiar casserole but lost it. So glad to find this one. In memory comparing my old recipe it froze beautifully. I would think this one would also. I am a great believer in once fixing twice eating. Thanks Steph for all the hard work you do. I know I can always find something great on your site. Gwen

  7. OMG! Had this tonight and this was so GOOD!!!! Lick the pan good! I love that it doesn't rely on cream of anything soup too! This is definitely a keeper in our house!
