It's a big week! Mardi Gras AND Valentine's Day!! I've got a couple of recipes for Fat Tuesday and a nice stay at home Valentine's Day meal (with dessert). I've even included a great no-bake Valentine's Day treat that would be great for co-workers, teachers and friends. 

In addition to the Mardi Gras and Valentine's Day recipes, I got some delicious dinner options with yummy side dishes. I hope you enjoy the recipes that you try this week!!

MONDAY
Cajun Chicken Tetrazzini - andouille or smoked sausage, chicken, pasta, cajun seasoning, cream of chicken, cream of mushroom, chicken broth and parmesan cheese. SO good! We ate this 2 days in a row. Can make ahead and refrigerate or freeze for later. We could not get enough of this casserole!


TUESDAY
Slow Cooker Cajun Potato Soup - easy potato soup jazzed up with cajun seasoning and andouille sausage. Frozen hash browns, chicken broth, andouille sausage, cajun seasoning,chicken soup and cream cheese. SO easy and SOOOO good. Everybody went nuts over this! Can use smoked turkey sausage instead of andouille. Serve with some crusty bread for an easy weeknight meal!




Red Velvet Poke Cake - red velvet cake soaked in sweetened condensed milk and chocolate and topped with a quick homemade cream cheese frosting. SO good! Great for potlucks and the holidays. #redvelvetcake #dessert #cakerecipe #christmas #valentinesday
