In the South, we eat black-eyed peas on New Year’s Day. Legend has it that if you eat black-eyed peas on New Year’s Day you will have good luck in the new year. I’m not one to tempt fate, so I ALWAYS eat black-eyed peas. You know, just in case! This Hoppin’ John recipe is a delicious way to eat black-eyed peas. Black-eyed peas loaded with ground beef, pork, and tomatoes. Serve this over some rice with homemade cornbread – YASSS!
How to Make Hoppin John with Ground Beef and Sausage
This is very easy to make. Start with browning some ground beef and ground sausage. I used a roll of Hot Jimmy Dean sausage. Once the meat is brown, drain the fat and add the remaining ingredients to the skillet. The main ingredient in Hoppin John is black-eyed peas. This is also loaded with diced tomatoes and green chiles, onion, garlic, celery, and bell pepper.
- I used regular Rotel diced tomatoes and green chiles. If you are worried about the heat, make sure to use Mild Rotel tomatoes or a couple of cans of plain diced tomatoes.
- I used a roll of Jimmy Dean sausage.
- Feel free to use all ground beef or all pork sausage. You can also substitute turkey sausage if you prefer.
- You can freeze the leftovers for a quick meal later.

Hoppin’ John
Ingredients:
- 1 lb ground hot pork sausage
- 1 lb ground beef
- 2 bunches green onions, chopped
- 3 stalks celery, chopped
- ½ green bell pepper, chopped
- ½ red bell pepper, chopped
- 4 cloves garlic minced
- 2 (10-oz) cans diced tomatoes with green chiles, undrained
- 3 (15.5-oz) cans black-eyed peas, undrained
Instructions:
- In a large skillet, brown sausage and beef over medium heat; drain.
- Add remaining ingredients and stir well. Reduce heat to medium-low. Cover and simmer for 20 to 30, or until very thick, stirring occasionally.
- Serve over cooked rice.
