I can’t get enough of this Bacon Cheeseburger Tater Tot Casserole! It was SO good. Like, really, really, really good. We ate this for lunch and dinner the same day! That should tell you how much we liked it. Hamburger, bacon, cheese, cheese soup, sour cream and tater tots – what’s not to love? Just heat up some green beans and you have a full meal!
This Bacon Cheeseburger Tater Tot Casserole can be made ahead of time and refrigerated or frozen for later. You can also divide it between two 8×8-inch foil pans if you don’t need to feed a larger family. We actually have a pan in the freezer right now!
This Bacon Cheeseburger Tater Tot Casserole is guaranteed to please the whole family. You can even add some tomatoes, peppers, mushrooms and onions to the mixture if you wanted to jazz it up. It would be great for a potluck. I think this would be perfect for tailgating this Fall too!
Bacon Cheeseburger Tater Tot Casserole
- 1½ pounds ground beef
- ¾ cup cooked chopped bacon
- 2 cups shredded cheddar cheese
- 1 (32-oz) package frozen tater tots
- 1 (10.5-oz) can condensed cheddar cheese soup
- 1 (16-oz) container sour cream
- Preheat oven to 350 degrees. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
- Cook ground beef in a large skillet until no longer pink. Drain fat.
- In a large bowl, combine cooked beef, bacon, cheddar cheese, tater tots, cheese soup, and sour cream. Mix until thoroughly combined.
- Spread mixture into prepared pan.
- Bake for 45 to 50 minutes, until bubbly.

Since my husband is not a fan of tator tots, wonder if you couldn’t just use raw diced potatoes? Might have to try it.
I made this tonight put a twist on the recipe and it was amazing!! I had to cook some sirloins so I used steak and bacon, I like to have a little kick to my dishes so I used a heaping tablespoon of pico, chopped some onion added garlic and I used nacho cheese sauce no soup. I cooked the meats separate from the pico, cheese sauce onion 1/2 cup sour cream once the sauce was warm I mixed the meat in. I cooked the tots then layered tots mixture tots topped it with shredded cheese baked for 10 min broiled the last few to golden the cheese. Yummy!!!
What can you use instead of cheese soup for gluten free?
I made this recipe dairy free. I used dairy free sour cream, dairy free cheese & instead of cream of cheddar soup I used the daiya brand Mac n cheese sauce! It actually tastes the same as the original recipe 🙂
I love how easily folks can play with this recipe to make it their own. I really think that it started out as the traditional tater tot casserole and just got twisted a bit here and there to become a whole new (yummy) bacon cheeseburger tater tot casserole! One note: I make tater tot casserole and funeral potatoes and after dozens of times, I found that low fat or even better non fat sour cream work better for these recipes. They have a better taste when cooked in the dish than the regular sour cream does. Crazy, I know, but it’s true.
I ALWAYS precook the tots for at least 1/2 the normal cooking instructions…. avoids soggy tots

The best thing in this casserole and is fantastic is cream of bacon soup, in place of the cheese soup ,leave out the bacon and it cuts calories to The flavor is fantastic
I took some pointers from other folks here and added onion (and garlic) to the ground beef, with a little seasoning salt. Used tater rounds and some cut in half tater tots as topping only, and gave them a light shake of Cajun seasoning. Topped with some additional cheese the last 5 minutes in the oven. Since I modified a little, I won’t star rate, but BOY was it tasty!

You can use any can of cream of soup you have on hand.

absolutely! I usually buy a big bag of precooked bacon pieces at Sam’s or Costco to use in recipes like this. Enjoy!
I have made this several times. Family fav! We like to drizzle ketchup and mustard on it and top it off with pickles (after it's cooked). I also like to add sauted onions to mine and it just gives it extra yummy flavor. Sometimes (when I remember) I add chopped onion to the hamburger when it's cooking. I use bacon instead of bacon bits. I cook my tots while browning the hamburger to make them crispy and then I put a layer on the bottom and a layer on top (we like crispy tots). Once the top layer gets crispy I top it with cheese (I only put maybe ¹/⁴ cup of shredded cheese in the mixture), let that melt and tada!
Is there a crockpot version? It is way too hot to use the oven. It looks really good and I want to try it out but during the summer, I cant use the oven.
Hubby and I loved it. I made a few changes like cooking the tater tots first, then lined them on the bottom of the dish. I reserved 1cup shredded cheese for topping. I added one shallot to the ground beef. I cooked 1/2 lb of bacon and diced it. I don't really care for bacon bits. I mixed all the remaining ingredients. I layered the mixture over the tater tots and topped with cheddar cheese and baked for 20 min at 350. Plain chicken thank you for the inspiration.
I put half the tater tots in thehe mixture, and half on top. Then right before i take it out, I put cheese and bacon bits on top of the crispy tater tots. It's delicious.
I like putting the tater tots on the top in rows instead of mixing in. they stay crunchy that way. Great recipe!

I have never baked this frozen. So, I cannot answer with certainty. As always, please use your best judgment regarding modifications.
I dont eat sour cream. Will it be ok without the sour cream

We just made this recipe tonight. It was outstanding! Delicious! Will definitely be making it again! We cooked it a little longer to make it more crispy. We had to subsitute the cheddar cheese soup with a Ragu cheddar cheese sauce and it came out fine (all we had!). Thank you for sharing a great recipe!

I let my daughter go through my Pinterest recipes and pick out something for me to cook for her sleepover (13 yr old's). The girls loved this! & so did my son and hubby!
Made it tonite – super-good!! I changed a couple of things… I cooked up a 8 oz pack of bacon and chopped that up instead of the bacon bits, rendered the bacon fat and used that to grease the 9×13, browned the beef with onions & garlic, added a 10 oz package of frozen supersweet corn and used half the shredded cheese. I give it a little zip with Whataburger Spicy Ketchup on top. I'n adding it to my "Dad's in charge of dinner" rotation.
Yummy. Made it by recipe the first time and was great. Second time I added some onion and because I like pickly, added some chopped up pickle on just my plate. Was awesome. Will make again and again.

I personally loved this dish but my kids did not. They didn't care for the texture of the tater tots after they cooked. If I were to make it again, I would leave out the tots, spread the meat mixture in the pan, and then top it with the tots. This approach would crisp up the tots more I think. 🙂
Try putting the tots on top and cook till the tots the desired consistency
Have no cheese soup on hand. Since Shredded cheese is an ingredient would it work to replace cheese soup with cream of mushroom? I'm assuming other than changing flavor slightly it would work.

No – I used the precooked bacon pieces/bits and they aren't hard. You can also use an equal amount of cooked chopped bacon.
No exaggeration – this is really good! I used Ore-Ida Mini Tater Tots and an entire package of precooked bacon (2.6 oz). For a little extra flavor I added a sauteed onion and some Lawry's Seasoned Salt. By mistake we purchased the Campbell's Healthy Request Cheddar Cheese soup (instead of the regular type) and it worked out fine. Loved it!!!
Could you replace the cheddar cheese soup with say Velveeta? My daughter has celiac disease and we cannot use the soup.
