Easy Bacon-Wrapped Pork Chops

Stop what you are doing and add these Bacon-Wrapped Pork Chops to your menu ASAP! They were the best thing we ate last week. Pork chops wrapped in bacon and coated in brown sugar and chili powder. O-M-YUM! They are a little sweet, a little spicy, and a whole lotta delicious! They only take a few minutes to prepare and they are ready to eat in about 30 minutes.

How to Make Bacon-Wrapped Pork Chops

This recipe is SUPER easy to make. Start with some boneless pork chops. Wrap each pork chop with two pieces of bacon. Mix together brown sugar and chili powder. Coat the pork in the brown sugar mixture and place on a baking rack on top of a rimmed baking sheet. Bake the pork chops. Turn the broiler on and broil both sides of the pork chops until the bacon is crisp.

  • I suggest using regular sliced bacon and not thick-cut bacon in this recipe. Thick-cut bacon won’t crisp up as easily.
  • This recipe uses 3/4-inch thick boneless chops, if your chops are thicker or thinner, the time will need to be adjusted.
  • Are Bacon-Wrapped Pork Chops gluten-free? Yes! All of the ingredients in this recipe are gluten-free.
  • For a low-carb/keto-friendly dish, you can substitute Swerve or Truvia Brown Sugar blend for the brown sugar.
  • I suggest cooking the pork chops on a baking rack on a rimmed baking sheet. This will help the bacon cook on the bottom of the pork chops and keeps the pork from sitting in the bacon drippings.
  • These are also delicious brushed with some BBQ sauce after cooking.

  • Use a meat thermometer to check the temperature.
  • To ensure tender and juicy pork chops, it is important to not overcook the pork.
  • You want the cooked pork chops to have a hint of blush when you cut into them.
  • It is perfectly safe to eat pork that is slightly pink!
  • I suggest baking these pork chops and then putting them under the broiler for 2 minutes on each side until the bacon is crisp and the internal temperature is 140ºF. Let the pork chops rest for 5 minutes before serving. The internal temperature will rise as the pork chops rest and be perfectly cooked.

  • Preheat oven to 400ºF. Line a rimmed baking sheet with foil and top with cooking rack.
  • In a shallow dish, combine brown sugar and chili powder.
  • Wrap each pork chop with two slices of bacon. Coat bacon-wrapped pork chops with the brown sugar and chili powder mixture. Place on the prepared baking sheet.
  • Bake for 15 to 18 minutes. Turn oven to broil and broil the pork chops 2-4 minutes or until they reach 140°F.
  • Remove from the oven and let pork chops rest 5 minutes before serving (the temperature will continue to rise to 145°F).
