Chicken, corn, lettuce, black beans, taco seasoning, tomatoes, catalina dressing, ranch dressing, and Doritos. SO good!! We never have any leftovers!

Anytime I can eat Doritos for dinner, I am game! This Doritos Chicken Taco Salad is a favorite. We make a beef version (Doritos Taco Salad). I like the original recipe, but I LOVE, LOVE, LOVE this chicken version!! I mean, I am the Plain Chicken after all. Chicken, corn, lettuce, black beans, tomatoes, and nacho cheese tortilla chips. I mean, what’s not to like?
How to Make Doritos Chicken Taco Salad
This salad is super easy to make. Start with cooking some chicken in taco seasoning and water. Toss together lettuce, corn, tomatoes, black beans, and chicken. Add Catalina and Ranch dressing. Toss to coat. Crush a bag of Doritos and add to the salad mixture. Toss and serve
- I used a rotisserie chicken for the cooked chicken in this salad and it came together in minutes.

- You can use raw chicken. Cut it into bite-sized pieces and cook it in the skillet until no longer pink. Add the taco seasoning and water and simmer for 5 minutes.
- I used Catalina dressing, but you can also use Thousand Island, French, or Russian dressing.

Doritos Chicken Taco Salad
Equipment:
Ingredients:
- 3 cups cooked chopped chicken
- 1 (1-oz) packet taco seasoning
- ⅔ cup water
- 1 head lettuce, chopped
- 4 tomatoes, chopped
- 1 (11-oz) can corn, drained
- 1 (15-oz) can black beans, drained and rinsed
- 1 cup grated cheddar cheese
- ¾ cup Catalina dressing
- ¼ cup prepared Ranch dressing
- 1 (10-oz) bag Doritos, crushed
Instructions:
- In a skillet over medium heat, combine cooked chicken, taco seasoning and water. Cook for 5 minutes, until water is absorbed. Remove from heat. Cool slightly.
- In a large bowl, combine lettuce, tomatoes, corn, black beans, cheese and chicken.
- Pour Catalina and Ranch dressing over lettuce and toss to coat.
- Add crushed Doritos and toss. Serve immediately.
