How to Make Twice Baked Potatoes

These potatoes are super easy to make. Start with cooking the potatoes. Once the potatoes are cool enough to handle, slice them in half. Scoop out the pulp and leave a thin shell inside the skins. Mix together the potato, butter, sour cream, cream cheese, garlic salt, and pepper. Stuff the potato mixture into the potato shells and bake.

Can Twice Baked Potatoes be Made in Advance?

You can make these twice baked potatoes ahead of time and refrigerate or freeze for later. You may need to add a couple of extra minutes to the cooking time if the potatoes are cold. To bake the potatoes after freezing, thaw completely and bake as directed below. If you don’t have time to thaw the potatoes, I suggest starting the potatoes in the oven covered in foil for about 15 minutes and then removing the foil and baking as directed below. Even though there are only two of us at our house, I always make the whole batch of these potatoes and freeze at least half of them for later.

  1. This was amazing. My children loved it as well. I added cooked, crumbled bacon to 4 of the halves. My 7 yr old and husband loved them. I cannot believe how well the flavors interact. Definitely will make again. Thank you Stephanie for another amazing recipe.
