These Million Dollar Twice Baked Potatoes are a new favorite at our house. I made these for a dinner party and they were a HUGE hit. I gave the extra potatoes to my friend and she emailed me to say the potatoes were even better reheated the next night. Baked potatoes loaded with butter, sour cream, cream cheese, cottage cheese, cheddar cheese, garlic, salt, and pepper. I mean, how could they be bad?!?! These potatoes are easy enough for a weeknight and fancy enough for dinner guests!
How to Make Twice Baked Potatoes
These potatoes are super easy to make. Start with cooking the potatoes. Once the potatoes are cool enough to handle, slice them in half. Scoop out the pulp and leave a thin shell inside the skins. Mix together the potato, butter, sour cream, cream cheese, garlic salt, and pepper. Stuff the potato mixture into the potato shells and bake.
Can Twice Baked Potatoes be Made in Advance?
You can make these twice baked potatoes ahead of time and refrigerate or freeze for later. You may need to add a couple of extra minutes to the cooking time if the potatoes are cold. To bake the potatoes after freezing, thaw completely and bake as directed below. If you don’t have time to thaw the potatoes, I suggest starting the potatoes in the oven covered in foil for about 15 minutes and then removing the foil and baking as directed below. Even though there are only two of us at our house, I always make the whole batch of these potatoes and freeze at least half of them for later.

Million Dollar Twice Baked Potatoes
Ingredients:
- 4 large baking potatoes
- ½ cup sour cream
- ½ cup cottage cheese
- 2 -oz cream cheese, room temperature
- ¼ cup butter, melted
- 1½ cups shredded cheddar cheese
- ¾ tsp salt, or to taste
- ½ tsp pepper, or to taste
- ½ tsp garlic powder, or to taste
Instructions:
- Preheat oven to 400ºF. Bake potatoes for 1 hour, or until tender. Reduce oven temperature to 375ºF.
- When cool enough to handle, cut potatoes in half lengthwise. Scoop out the pulp, leaving a thin shell. Set skins aside.
- In a large bowl, mash potato pulp. Stir in sour cream, cottage cheese, cream cheese, butter, cheddar, salt, pepper, and garlic powder. Stuff mixture into potato skins.
- Place potatoes on a baking sheet.
- Bake at 375ºF for 20 minutes, until heated through.

Fabulous!! My go to every time!! Everyone comments on how great these potatoes are! For those of you who do not like cottage cheese, you can not taste it when mixed into the potatoes, so go ahead and try it! I make an entire 5 lb bag of potatoes, then freeze my prepared potatoes for a later use. I throw them in the oven, right from the freezer at 375 degrees for about 45-60 minutes. Turns out wonderful every time!! Thanks for a great recipe!! And, I highly recommend your scalloped potato recipe too. Soooo good!!
