We took a mini vacation last weekend to St. Augustine for The Players golf tournament. Well, I didn’t actually go to the tournament. I went shopping at the outlets with my Mom while the guys went to watch the golfers. My Dad’s company has a store at one of the outlet centers, and I usually take the ladies that work there a batch of goodies. We loved the Peanutter Butter Cookies
so much that I thought about making another batch for the ladies at the store, but I didn’t want to do the same thing again. I had some brownie mix in the pantry and decided to do a peanut butter and chocolate cookie with the brownies.
Oh My Goodness! These cookies were amazing! We loved them so much that we were worried there wouldn’t be any left for the ladies at the store in St. Augustine. Fortunately for them, this made a lot of cookies. The cookies were soft on the inside, and the brownies complemented the peanut butter cookie perfectly. Chicken Legs raved about these cookies all weekend. I think they are one of his new favorites. I will definitely be making these again very soon.
Peanut Butter Brookies
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1/2 cup creamy peanut butter
- 1/2 cup crunchy peanut butter
- 1 cup brown sugar, firmly packed
- 1 cup granulated sugar
- 2 eggs
- 2 tsp vanilla
- 2 tsp baking soda
- 2 cups all-purpose flour
- 3 cups brownies, cooked and chopped into small pieces (about half of an 8×8 pan)
Preheat oven to 350.
Cream sugars, butter, shortening and peanut butter until light and fluffy. Add the eggs and vanilla. Mix well. Gradually add the flour and baking soda until well blended. Stir in brownie bits.
Using a medium cookie scoop, scoop into balls and roll in sugar. Place on ungreased cookie sheet. Bake for 11-13 minutes.
