Slow Cooker Potato Soup with frozen hash browns, chicken broth, cream of chicken soup, onion, and cream cheese
I’ve had this recipe pinned on my Food board on Pinterest for a while. I finally got around to making it last weekend, and it was surprisingly good! This might be the easiest dinner I’ve ever made. Actually, this was so easy to make that I let Chicken Legs make it! He was concerned that it was too thick, but I was more concerned that it would be bland. Well, it turned out that neither of us had anything to worry about. The mixture magically transformed into a wonderfully delicious bowl of soup. We both loved it. We topped the soup with some bacon bits, cheese and sour cream. I would have added green onions, but I didn’t have any. Next time!
Slow Cooker Potato Soup
ingredients:

1 (32-oz) bag frozen shredded hash browns

3 (14.5-oz) cans chicken broth

1 (10.75-oz) can cream of chicken soup (I used 98% fat free)

2 Tbsp minced onion flakes

1 tsp pepper
-
1 tsp salt
-
1 (8-oz) package cream cheese (I used light)
instructions:
- In a crockpot, combine everything except for the cream cheese. Cook for 8-10 hours on low.
- About 15 minutes before serving, add cream cheese. Stir until melted and thoroughly combined. Serve with cheese, sour cream, bacon bits, green onions.
Iāve been making this soup for years and we love it. Recently itās been really watery and doesnāt get thick like it used to. Anyone else have this problem? Iāve been using cubed hash browns instead of shredded. Thoughts?
Iām not sure why. What did you change? I always use shredded hash browns and cook it until it is thick.
I want to make this for a ladies luncheon. How many will it serve. I have made this for my husband and I and we ate it for dinner and for breakfast the next day. It was that good. Now how can I make this for say 10 servings. Just in case ome of the ladies wants a second bowl. Thank you, I love your blog.
I had doubts about this because it seemed easy with few ingredients. My favorite kind of recipe though. This was great! I didn't add one thing extra. Perfect as is. Thanks for another great recipe!

I make this with cream of potato instead of cream of chicken. I don't like bits of chicken in my potato soup lol. I also use the cubed hash browns versus shredded.
Ah! I just put mine on to cook. Wish I'd read this first. I totally agree about the chicken. I did use cubed hash browns, but only because the grocery was out of shredded. Glad to hear it works ok!

This is the easiest and most tasty potato soup recipe I have ever found! My kids LOVE it. I like to put it on at night, wake up and stir the cream cheese in and then keep on warm for them to have it the rest of the day. SO GOOD!

Can't wait to try this, but am unsure why one would wait to put the cream cheese in? I've done plenty of crock pot recipes where you can put it in at the beginning and it blends quite well.

This is my go-to potato soup recipe. I used half of a yellow onion diced, instead of onion flakes and added diced bacon (half into the soup and half for garnish) and some chopped chives, same way. I serve with cheese rolls and sour cream/chives/diced bacon as additional toppings.
It makes such a huge pot, I am going to try freezing half next time.

My son said it was the best soup I have ever made. I have to agree with him. It was probably the easiest soup I have ever made. I did use 4 cups of broth instead of 3 and I did add 1cup of Cheddar cheese with the cream cheese.
So I made this with a few tweaks and it was AMAZING!
I used cream of onion soup because cream of chicken bothers me š and I omitted the onion flakes. It was a huge hit!!! Absolutely delicious!!!
Do you think you could make this on the stove? And if so how would I adjust it? Sounds so good, but I'd need to make large batches for an event and several hours makes it difficult.
This looks so good…so good in fact that I tried it for a potluck dinner on a windy, rainy day, that was supposed to be bbq worthy day and it was a hit. So scrumptious, and an awesome tummy warmer. I was also thinking that with dehydrated hashbrowns this would make a fantastic pantry meal for when the power goes out. I'll give it a try and post how it goes.
