I’ve had this recipe pinned on my Food board on Pinterest for a while.  I finally got around to making it last weekend, and it was surprisingly good!  This might be the easiest dinner I’ve ever made.  Actually, this was so easy to make that I let Chicken Legs make it!  He was concerned that it was too thick, but I was more  concerned that it would be bland.  Well, it turned out that neither of us had anything to worry about.  The mixture magically transformed into a wonderfully delicious bowl of soup.  We both loved it.  We topped the soup with some bacon bits, cheese and sour cream.  I would have added green onions, but I didn’t have any.  Next time!

ingredients:

  • 1 (32-oz) bag frozen shredded hash browns
  • 3 (14.5-oz) cans chicken broth
  • 1 (10.75-oz) can cream of chicken soup (I used 98% fat free)
  • 2 Tbsp minced onion flakes
  • 1 tsp pepper
  • 1 tsp salt
  • 1 (8-oz) package cream cheese (I used light)

instructions:

  1. In a crockpot, combine everything except for the cream cheese. Cook for 8-10 hours on low. 
  2. About 15 minutes before serving, add cream cheese. Stir until melted and thoroughly combined. Serve with cheese, sour cream, bacon bits, green onions.

  1. Can't wait to try this, but am unsure why one would wait to put the cream cheese in? I've done plenty of crock pot recipes where you can put it in at the beginning and it blends quite well.

  2. This is my go-to potato soup recipe. I used half of a yellow onion diced, instead of onion flakes and added diced bacon (half into the soup and half for garnish) and some chopped chives, same way. I serve with cheese rolls and sour cream/chives/diced bacon as additional toppings.
    It makes such a huge pot, I am going to try freezing half next time.

  3. My son said it was the best soup I have ever made. I have to agree with him. It was probably the easiest soup I have ever made. I did use 4 cups of broth instead of 3 and I did add 1cup of Cheddar cheese with the cream cheese.

    I used cream of onion soup because cream of chicken bothers me 😉 and I omitted the onion flakes. It was a huge hit!!! Absolutely delicious!!!

  5. Do you think you could make this on the stove? And if so how would I adjust it? Sounds so good, but I'd need to make large batches for an event and several hours makes it difficult.

  6. This looks so good…so good in fact that I tried it for a potluck dinner on a windy, rainy day, that was supposed to be bbq worthy day and it was a hit. So scrumptious, and an awesome tummy warmer. I was also thinking that with dehydrated hashbrowns this would make a fantastic pantry meal for when the power goes out. I'll give it a try and post how it goes.
