Black Eyed Pea Soup for New Year’s Day

In the South, it is a tradition to eat black-eyed peas on New Year’s Day for luck and prosperity in the new year. I don’t know if that is true, but I’m not taking any chances. Especially after this year! LOL! This year we are having a big bowl of this Smoked Sausage & Spinach Soup. It is super easy to make and tastes great! I am not really a big spinach fan, but I really liked this soup! It has tons of great flavor from the sausage and a packet of Knorr vegetable soup mix. YUM! Whip up some biscuits or cornbread and you are set!

How to Make Smoked Sausage & Spinach Soup

This soup is very easy to make. Start with sautéing some smoked sausage in a Dutch oven. Next, add spinach, diced tomatoes, chicken broth, black eyed peas, great northern beans, minced onion, and a packet of Knorr vegetable soup mix. Bring the soup to a boil and simmer until ready to serve.

  • Feel free to substitute smoked turkey sausage for a lower calorie option.
  • Do not make the Knorr vegetable soup. You are only using the packet of seasoning mix.
  • Want a spicier soup? Use a can of diced tomatoes and green chilies in this soup.
  • Can use any canned beans you prefer. Butter beans, lima beans, kidney beans, garbanzo – whatever you like works fine.
  • I suggest using low-sodium or no salt added chicken broth.

A reader sent me this recipe. The original recipe used turnip greens. We aren’t really turnip green fans, so I used spinach. Either way, it will taste delicious. That is, if you like turnip greens. Ingredients:

  • 1 lb smoked sausage, cut into bite-sized pieces
  • 1 (10-oz) package frozen spinach, thawed and drained
  • 2 Tbsp dried minced onion flakes
  • 1 (15-oz) can diced tomatoes, undrained
  • 1 (15-oz) can black eyed peas, drained and rinsed
  • 1 (15-oz) can great northern beans, drained and rinsed
  • 5 cups chicken broth
  • 1 packet Knorr vegetable soup mix

Instructions:

  • In a Dutch oven, cook smoked sausage until it starts to brown. Drain any excess fat.
  • Add remaining ingredients. Bring to a boil and simmer 20 to 30 minutes.

    1. Saute the sausage and dump everything in the slow cooker and cook until warm. You can cook this on LOW or HIGH. I would say about 6 hours on LOW and about 3 hours on HIGH.

  1. I love EVERYTHING this recipe. I want to make this in the crock pot, after doing all the prep. Could I use fresh spinach and add it at the end. About low long would I cook it .

  2. Really a wonderful soup, but WHY would you not use FRESH spinach in this soup??? The flavor difference is astounding. It only takes our bunch (on sale this time of year), coarsely chopped. Throw it in as you would the frozen spinach. You will get all the added nutrients as well. Fresh is almost always better!!
