This “Souper Rice” is so good! It is like a cheater risotto. This rice is made with chicken soup, instant rice, chicken broth, and parmesan cheese. It only takes about 10 minutes from start to finish. We both loved the flavors. This is a great base recipe to get creative with. You could add some chicken, peas, and mushrooms and this rice would be a full meal.
Feel free to use Cream of Mushroom soup or your favorite Cream of Soup flavor in this dish. You can also switch up the cheeses. Cheddar, asiago, romano – use whatever your family likes. I used grated parmesan cheese from the green jar and it tasted great!
- 1 (10.5-oz) can cream of chicken soup (can use 98% fat free)
- 1½ cups chicken broth
- 1½ cups uncooked instant white rice
- ¼ cup grated Parmesan cheese (green can or fresh)
- dash freshly ground black pepper
- Heat the soup and broth in a 2-quart saucepan over medium-high heat to a boil.
- Stir the rice, cheese, and pepper into the saucepan. Cover the pan and remove from heat.
- Let stand for 5-8 minutes, until rice is cook and most of the liquid is absorbed.

OMG this is so good! Never thought of using broth and parmesan..duh..compete game changer. Thank you
Ok, Plain Chicken Lady!! I love how straightforward, easy, and tasty the recipes you share on this site are!! This is the latest example for me. I made it tonight and it was so good. And to your point, I can see how one can use this as the basis for additional exploration of tastes and ingredients. And to think I never purchased a box of minute rice in my life until today! Thank you very much for sharing this. I have a new go-to side dish.
This was a great quick meal. I did this recipe 3 times already, each with a different type of instant. (White, Jasmine, and Brown) It works well with Instant Brown Rice, you just have to adjust the measurements of the Broth(water) according to measurements on the back of the box. It taste even better with smoked cheese added.
I’m glad you posted this because I have some brown rice that I wanted to use. Thanks for experimenting for me!
Was really good. Well be making it again. Thank you for sharing the recipe.
Thank you so much for sharing this great recipe! I am starting to experiment in the kitchen and the second or third time I made this, I added a teaspoon of lemon zest and a pinch of cayenne pepper 😊
Love the sound of this recipe but just wondering if instant rice is the same as microwave rice? (Usually takes around 90 seconds to cook in the microwave)
no. they are not the same thing. This recipe is for instant rice. I buy Minute Rice brand.
This is now a side dish go to in our house. Leftovers are a breeze to reheat. Thank you!
Is instant rice the same as one minute rice?
I made this with long cooking rice it turned out great!! I just cooked my rice with the chicken broth then I added the can of cream of chicken soup and Parmesan cheese. I didn’t have instant rice and didn’t feel like waiting to go to the store to try it. It’s a keeper
Good afternoon, I’m making this rice dish for dinner today. Can I use Bone Brothers in this dish
I meant Bone Broth lol
Super helpful! Thanks for posting this for us to know 🙂
Can you use boil n bag rice
This recipe is formulated for INSTANT RICE.
I am not a fan of plain white rice but adding these few other ingredients makes it so good! I have made this quite a few times using different cream soup flavors. It’s so easy and such an inexpensive side dish. Everyone in my family loves it too.
I love white rice! This dish comes together very quickly makes great either side dish or a main dish with a few extra ingredients. I would suggest using low sodium soup and broth, the Parmesan adds tons of salt. Can’t wait to try using different flavors of soup.
I’ve been making this recipe for over 40yrs. Was even on t.v. commercials for Campbell’s, back in the 80’s. Glad to see that others are learning what I’ve always known. That this is a great main/side dish that tastes great! Enjoy.
I’m trying it today, it’s still on the stove right now. I don’t know what my problem is with instant rice. I followed the recipe *to the letter* with Minute Rice, etc. Full boil, then added rice/cheese/pepper, stirred, removed from heat. 8 minutes later when I checked it was still rice soup with very al-dente rice. I’ve re-heated it to simmer for another 5 minutes.
Is this just common with minute rice that the actual cooking time can vary widely? Or am I doing something wrong. I’m not at high altitude, the rice is new.
Did you cover the pot with a lid after you removed it from the heat? That’s the only reason I can think of if you followed all the other directions.
So the rice cooks without being on the heat? How does that work? 🤔
That is how minute rice always cooks
I always have instant rice in my cupboard since I always see recipes that call for it.
Delicious, easy, & cheap
Can this recipe be doubled??
Do you think instant brown rice would be okay in this recipe?
I will take longer to cook with instant brown rice, but otherwise, I think it will be fine.
I love your website! Can’t wait to try like 15 recipes!
Made your recipe as stated and loved it. I added chicken, peas and carrots to my 2nd batch using Vegetable broth instead of Chicken broth and loved it as well. thanks for the recipe!!!!!
I’m definitely going to try this. I’m so sick of “plain” white rice…Thanks for the recipe!
Made this with cream of broccoli and vegetable stock and it was so good! This might be my new way to make rice.
SO glad you enjoyed it!
I love this recipe and it was super easy and delicious! I served it with homemade Italian chicken tenders and broccoli.
Thought about trying this but adding broccoli and leftover turkey from Christmas dinner
When would I add the spinach if I wanted to add to it?
I would add it at the beginning with all of the other ingredients.
This is delicious and so easy.
Can one use the packaged rice that’s ready to heat and eat?
Not in this particular recipe
How much rice how many cups?
3rd ingredient listed
This was super fast and easy. I added frozen peas and left over chicken and made a one-pot meal. I even had enough left over to take to work for lunch the next day. One tip for those of us watching our sodium intake – don’t use the 98% fat free – it has almost twice as much salt as the heart healthy variety.
Could it be done with cauliflower rice?
What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
CAN YOU FREZE ANY LEFT OVERS?
I’ve never frozen rice like this, so I don’t know.
Tastes great. I didn’t have cream of chicken soup so I used cream of onion, WOW, it was great.
This is delicious!!! I have finally found my recipe for rice pilaf!! Thank you so much!
I am wondering about using tomato soup, some green chilis or salsa, maybe some chili powder, etc for a mexican version???
Sounds good. I say give it a try!
This has been my favorite rice recipe for a long time. Thank you Plainchicken for rhe recipe. Last night I added a small can of green chiles. It was wonderful! My husband, who loves all things rice, asked to save the leftovers. It paired so well with the chicken he had smoked.
I’m making this right now! Only had instant brown rice.. waiting to eat!!
Made it for the first time tonight and LOVED it!!!
Added peas for color! Thank you!
I made it with white rice, cooked the rice till sticky then added together. Used broccoli cheese condensed soup (what I had) so good!!! My girls 6 and 3 liked it too!!
I’ve made this 3 times already and absolutely love it..it’s a fav in my house…i used broccoli cheese soup instead of cream of chicken (cause that’s all I had) and it was amazing 👏…if you have any tips on the best way to heat it up I’d appreciate and thank you for the recipe!
Do you think instant brown rice would work?
I think that would work – check the box for the cooking times.
What should I do differently if I dont have the instant rice? I just have either Basmati rice or regular white rice.
I have only made this recipe with instant rice. Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
I’ve cooked this type of rice for years. If you use any other rice, just combine the ingredients in a casserole dish, cover and bake on 350 for about an hour, or until the rice is tender.
I'm going to add broccoli to mine. Yummy ????
How do you think it would work without the broth or if I subbed it with water?
It should be fine
All I have in the house right now is a bar of real parmesan cheese. Do you think it would be ok to shred it and sub for green can? Want to make it NOW, not wait til next trip to grocery, which is 17 miles away. Tnx
Sure! Either will work fine. Enjoy!
Not a cheese fan, could I make this without it?
Making this with regular rice tonight. But I'm only putting one cup of rice in it and I am adding chicken.
All I have is steamed rice in a bag, do you think if I halve the liquids that would still work since the rice is already cooked?
I've made this 3 times & it's always good!
I made this last night – added chopped rotisserie chicken, it was delicious!
I made this tonight I used grated parmesan reggiano. It cane out perfect so easy and yummy. Ann I dont care for instant rice and had to go out and buy it but it was well worth the $1.50 because this came out great.
Thanks Katara! Got the instant rice & making it today!
This looks so good. I'm always on the lookout for easy sides.

Oops! This sounds great but I never have instant rice on hand. Has anyone made it with regular white rice?
