Taco Stuffed Biscuits

Taco night is a favorite at our house, and these Taco Biscuit Cups are our favorite way to celebrate! Spicy taco meat stuffed into biscuits, topped with cheese, and baked in a muffin pan. O-M-YUM! Kids and adults gobble these up! These taco biscuit cups are perfect for parties, game nights, and a quick and easy weeknight dinner. Customize them with your favorite taco toppings like sour cream, guacamole, or salsa for an extra flavor boost. Give this recipe a try for an easy lunch or dinner.  I promise you can’t just eat one!

How to Make Taco Biscuit Cups

This dish is super easy to make with only a few simple ingredients. In a large skillet, cook lean ground beef over medium-high heat. Drain excess grease. Add taco seasoning, salsa, and water to the skillet. Stir well. Cook over low heat for 10 minutes, or until the sauce has thickened. Remove from the heat. Stir in shredded cheddar cheese and set aside.

Open a can of refrigerated biscuits. Separate biscuit dough into 10 biscuits; place each biscuit in a regular-size muffin tin that has been sprayed with nonstick cooking spray. Using a rolling pin, roll each biscuit into a large circle. Firmly press dough in the bottom and up the side of each muffin cup.

Spoon the meat mixture into the biscuit cups. Top each biscuit with grated cheese. Bake in a preheated oven until the biscuits are golden brown. Sprinkle with chopped cilantro.

  • Preheat oven to 350ºFl Spray a regular muffin pan with nonstick cooking spray.
