I found this recipe on Tasty Kitchen. I immediately knew I had to try it because it combines three of my favorite foods - chicken, rice-a-roni and French fried onions! This was super quick and easy. I used rotisserie chicken and this was ready in no time flat. We both really enjoyed this; especially the crunchy onions on top.
Chicken Rice-a-Roni Casserole
adapted from Tasty Kitchen
(Printable Recipe)
1 box chicken flavor Rice-A-Roni
1 can cream of chicken soup (I use 98% fat-free)
1 cup sour cream (can use low fat)
3-4 cups cooked, chopped chicken (or 1 whole Rotisserie Chicken)
1 (6 oz) can French fried onions
Preheat oven to 350 F.
Prepare Rice-A-Roni according to package directions. Add soup, sour cream and chicken. Stir to combine. Spread rice mixture in a lightly sprayed 9x13 pan. Top rice with fried onions. Bake uncovered for 30 minutes.

Looks really good Steph. Bev likes to start with Rice a Roni for Spanish rice. We should be passing thru your neck of the woods later this AM on the last leg of our trip home.
Hi Steph,
Wow! That looks super easy and also delicious! Love the idea of the crunchy onion rings on top.
Have a great day!

Do you always eat a half cup of those fried onions before using them in a recipe? I can't help myself.
I made this last night and it was a hit! I'll definitely be making this again. Thanks for the recipe!

My family of (4) loved this the first time I made it ... however it makes SO much! Do you think I could split it into two casseole dishes and freeze one? Wasn't sure about freezing sour cream??!!
You could freeze it. I freeze potato casseroles with sour cream in it all the time
