I found this recipe on Tasty Kitchen.  I immediately knew I had to try it because it combines three of my favorite foods – chicken, rice-a-roni and French fried onions!  This was super quick and easy.  I used rotisserie chicken and this was ready in no time flat.  We both really enjoyed this; especially the crunchy onions on top.

Chicken Rice-a-Roni Casserole – GREAT weeknight chicken casserole! Everyone cleaned their plate and went back for seconds!! Can make ahead and freezer for a quick meal later! Chicken Rice-A-Roni, cooked chicken, cream of chicken soup, sour cream, french fried onions. Great flavor and so easy to make!

Ingredients:

Instructions:

  • Preheat oven to 350º F.
  • Prepare Rice-A-Roni according to package directions. Add soup, sour cream and chicken. Stir to combine.
  • Spread rice mixture in a lightly sprayed 9×13 pan. Top rice with fried onions. Bake uncovered for 30 minutes.

  1. The first time I made this was for my daughter’s family to have when they returned from a road trip. I added some broccoli. Everyone raved about it, and now it’s a regular. I later tried it at home using the beef flavored rice-a-Roni, cream of mushroom soup, ground beef and broccoli. Also very good!

    1. I know its just me but do you mix the condensed cream of chicken soup with any milk or water or just use straight out of the can ?

  3. I rarely leave reviews for recipes but I just had to let you know my husband and I loved your recipe for chicken rice-a-roni casserole. I accidently put the rice seasoning in with the chicken, sour cream and soup but it didn’t matter. It turned out perfect. And the oven timing was perfect too. The onions on top didn’t burn at all. I served it with broccoli but was thinking maybe I’d add it to the recipe next time – – and there will be more next times. Thank you, Stephanie!!

        1. Assemble the casserole. Cover the pan with plastic wrap and aluminum foil. Freeze for up to 3 months. When ready to bake, thaw and bake as directed.

    1. I am confused on this as well. Do you mix the uncooked rice with the sour cream and cream of chic soup or do you have to fully make the rice with the seasoning packet it comes with then mix it all together. If so then why does it have to cook so long if the rice and chicken is already pre cooked. I’m making it now and im cooking the rice as I type. I hope this is the correct way.

      1. Does anybody not read the damn recipe before posting stupid question that the answer is in the directions and the directions are in the recipe! Just follow the directions it’s something we learn in elementary school.

  7. This was very easy my suggestions would be 2 boxes of the Rice a Roni being that we like ours a little more meaty fixed as written it was more of a thick soup type consistency. VERY GOOD tho we enjoyed it and makes enough for a family!

  9. This casserole is excellent, especially if the purse strings are pulled real real tight. My kids and hubby enjoyed this casserole, as did I. In my opinion, however, it does not make very good leftovers.

  10. Both hubby & I loved this! Today I substituted ground beef for the chicken, beef flavor Rice-a-Roni for the chicken, and cream of mushroom soup for the cream of chicken. It was just as good…..just a variation. 🙂

  11. I remember my mom made this growing up. But I think it had ground beef. So I'm not sure what the change (if at all) would be for the cream of soup?? Wow. Throwback to the 90s. Now I want this!

    1. Made it tonight. Didn’t have rotisserie chicken so chopped some boneless thighs and browned them. Used rice pilaf as that was what I had on hand. Used cream of chicken with herbs – again what I had. Used the sour cream and fried onions lol. Came out delicious!!!
